I made a stroganoff which was tasty or I coat the chicken with breadcrumbs and made chips and coleslaw

2 stock cubes, onions, peppers, half cooked rice, tiny bits of broccoli, pint of water, seasoning. Cooked the chicken breasts in the oven now added all the other stuff, waiting for some of the liquid to reduce on a slow heat.

Cut into chunks or leave whole. Fry in a shallow pan with chopped fresh or dried herbs and seasoning, and add juice of 1-2 limes and a knob of butter when about done and cook for another couple of minutes.

well, vegetarian DH is currently cooking a pack of chicken breasts as I type for our 17 year old ill dog. He is lightly simmering them in homemade chicken stock and will add a bit of cream towards the end for added fatness.

However, my favourite things to do with chicken- chicken noodle soup. Or sliced chicken, sliced peppers, tablespoon of paprika, tin of passata, a dollop of sour cream for Hungarian chicken.

Sprinkle on some taco seasoning, cook in the oven. Serve with sweet potatoes & corn

A super easy and tasty dinner:

Put the breasts on a baking tray
Drizzle with olive oil
Put a generous blob of garlic purée on each one, then mash it down with a fork
Sprinkle Parmesan over each
Bake in the oven for about 20/25 minutes
Serve with baked potatoes and green veg

Otherwise fajitas, pasta bake with courgettes, broccoli, peppers, and cream, or satay curry

Our favourite go-to is roasted and flavoured with spices, (Mexican or Chinese or Cajun) on top of hinly sliced random veg. Eg celery, carrots, broccoli, cabbage, potatoes.

Sesame chicken (ginger, garlic, soy sauce, red chillies and sesame seeds with diced chicken and mangeout) with noodles; or

Chicken stuffed with cheese, wrapped in bacon and roasted served with garlic, cream and white wine sauce serve which veg and baby potatoes.

You don’t have to eat them all today, just so you know - once they’re cooked you gain another 3 days at least where they’ll be perfectly fine to eat.

But today I’d probably make a Thai red curry, because that’s what i fancy right now!

Chicken and basil (Thai-ish but I made it up so not genuine). Put one onion or 4 shallots, a thumb-sized piece of ginger, 1 or 2 red chilies and 3-4 cloves of garlic in the food processor and pulse so chopped but not puréed. Cut chicken breasts into small bits (like big dice). Get Thai fish sauce and dark sugar ready. Pull all the leaves off a basil plant and have them ready. Decide whether you want noodles or rice and if you want any veg on the side to work out the order of things and how long things take.

Heat the wok with about 2 tbsp veg oil and fry the chicken dice until they have just turned pallid and disgusting looking. Take them out and put them in a bowl to wait.

Top up the oil a bit and fry the onion/chilies etc mixture for about 2 mins until the onion is soft but doesn't catch.

Put the chicken back in with the mixture, including any juice that has come out of it and stir fry until it colours nicely.

Sprinkle over about 2 tsp dark sugar and about 1-2 tablespoons fish sauce and stir fry rapidly till it stops smelling of fish sauce (about 30 secs-1 min).

Stir in the basil leaves and briefly wilt them. Serve up.

I have soy sauce on my rice because I'm a salt fiend and not an authentic Thai person.

If it was me I would make fajitas or a curry. DH would butterfly them and fry them and serve with mash and pepper sauce. You could do sweet chilli chicken pasta too. Just fry the chicken, add cream, sweet chilli sauce and a handful of frozen peas to the pan and chuck in some cooked pasta.

I had traybake for lunch. Chop chicken, an onion, 2 peppers into chunks, add a handful of cherry tomatoes and 2 or 3 crushed garlic cloves. Chop a standard garlic bread baguette into chunks. Mix all together in a tray, drizzle with oil, season with salt, pepper and I add rosemary too. Bake for 15-20 min at 190fan checking the chicken is cooked through before serving. (Mine gets served with a green salad and garlic mayo... was scrumptious and there is none left)

Make a paste with curry powder and water add chicken and marinade in fridge for 1-2 hours (I do this in a zip lock bag).
Cut a cauliflower into florets and new potatoes in half then par boil for 10 minutes.
In ovenproof dish put chopped onions, courgettes, halved mushrooms. Add chicken breasts, cauliflower and potatoes and remaining marinade liquid then cover and cook for 20 minutes.
Add halved cherry tomatoes, leave tin foil off and cook for further 20 minutes.
Finally add a bag of washed spinach, return to oven uncovered and finish in oven for 5 minutes.
Serve with salad and chutney or make mint dressing with natural yoghurt and a spoonful of mint sauce

We are having chicken breasts tonight. I'm going to beat them flat with a rolling pin and then coat them in parmesan and breadcrumbs and fry them. We're having them with hassle back potatoes and whatever salad/veg I can rustle up.
