I've just bought some Roasted Vegetable Couscous and don't know what to do with it.

I've recently started to eat healthy, and try new things. The new fruit this week is Kiwi, and I decided to try and branch out a bit with savory too, so I've gone for a Sainsburys Roasted Vegetable Couscous. I've never had it before and don't know what it goes with! Do you eat it on it's own? Do you have to flavour it with something? Is it nice?! Grin
Any advice gladly received.

It’ll already be flavoured.

I usually have couscous with lamb or chicken on the side.

I put it in a bowl with little gem lettuce, black olives, plum tomatoes, falafel and some Piri piri mayonnaise

I do roast chicken or baked chicken thighs covered in harissa

If you’re not such an adventurous cook you could also bake some salmon fillets

I love that kiwi is new! What other things haven’t you tried that you’ll be trying?

I cut up some cooked chicken, feta cheese, cherry tomatoes, olives (whatever I have) and mix them through it.

Add chickpeas or cheese like feta or grilled halloumi which you can flavour with harissa or cumin

I have some too, I'm going to do a halloumi tagine with olives and artichokes.

Couscous is pointless. It's just another form of pasta. It's made from whole wheat flour so it's a bit better but it's still just four and water.

Use bulgar wheat instead. It's a a source of protein and isnt processed nonsense. Really easy to cook; roast whatever veg you like in an oven dish with a lid, then add the dry bulgar wheat and cover with stock, put the lid on and cook for another 20/25 minutes or so (checking to make sure it doesnt get dry and adding water as necessary).

It's nice on it's own with some feta cheese on top, or as a side dish any anything really.

Or use it to stuff some
Roasted peppers.

Microwave half an aubergine till cooked then fry it with a bit of olive oil and garlic.

@73kittycat73 You could make up the couscous and extra veg, then chuck in black olives and feta cheese. Or mozzarella.

Thing One, yes it's nice. Thing Two... It's about the easiest and cheapest to make all in one vegan high speed meal that can then be taken off in tupperware that I know of. And I'm not even vegetarian let alone vegan!

How on earth is eating cous cous or pasta pointless because it’s made of durum wheat? Most foods are processed too, like the feta you’ve suggested she eats. What a weird way to talk about food and such an offputting thing to say when the OP is looking to expand her diet.

I think grilled halloumi would be a good pairing or having it on the side of a vegetable tagine.

I have couscous with roast courgette, peppers and onions, stir them through the pasta with toasted pine nuts, feta cheese and sometimes a few spinach leaves. Top with feta cheese and sweet chilli sauce. One of my favourite meals and I'm not even vegetarian!

I chop up peppers and onions and roast them in the oven with olive oil and garlic then mix into the couscous and serve with sausages or fish.

It would be nice in roasted peppers with cheese crumbled into it as well.

They taste the same, you cook them and uss them in the same way. One is whole grain and a protein sourxe, the other is flour and water. The OP said she wants to eat more healthily; this is a very simple and easy swap which is healthier.
