If you have a big lunch what do you have for dinner?

Having a decent home-cooked lunch with pudding tomorrow and wondering what to make for dinner. If it was just me I wouldn't bother but the dc always seem to want food. I'm trying to stop with the quick fix beans on toast type thing but struggling to think of anything that is quick, easy and healthy.
Any suggestions?

I just swap lunch and dinner around. So crackers and cheese or soup or a boiled egg etc for dinner. What’s the pudding? (Love a good pudding!)

Yellowbowlbanana · 06/03/2021 18:39

It's actually just soup for lunch to be honest but with homemade bread and sausages followed by bread and butter pudding and custard. I think that's why I'm struggling. My normal go to would be bread based but that's a lot of bread in one day!

Ooh! In which case stir fry? Omelette? Or veg sticks with Houmous. Bread and butter pudding? Count me in!

Depends how greedy I'm feeling to be honest. But as others have said just swap round. Maybe select a light lunch option such as soup or cereal

Flaunch · 06/03/2021 18:49

On a Sunday we usually only have two meals, breakfast and then a big meal with pudding about 3. I can’t be dealing with eating big meals at lunch time.

Etherealhedgehog · 06/03/2021 18:54

I do a super basic version of menemen (Turkish eggs) - basically just saute chopped onion, peppers, spring onion and tomato. Add beaten egg, stir so it kind of scrambles (other recipes keep the eggs whole, kind of like shakshuka). Have this on toast, perhaps with salad on the side.

sausagerole · 06/03/2021 19:02

Fruit smoothie, crackers, cheese, nuts, yoghurt

Aquamarine1029 · 06/03/2021 19:05

Whenever we have a big lunch it's "serve yourself" for dinner. Usually small things like cheese, crackers, egg on toast, etc. I actually prefer a bigger lunch and something small for dinner.

katienana · 06/03/2021 19:08

I wouldn't worry about having "too much" bread in one day, it's not going to make you fat. I'd just have whatever is easy, a light meal like a sandwich or cheese on toast.

Lonoxo · 06/03/2021 19:10

Toast.
Cheese and tomato toastie.
Fried egg sandwich with some lettuce or spinach.

NeedToGetOuttaHere · 06/03/2021 19:58

A small jacket potato with tuna perhaps?

ChameleonClara · 06/03/2021 20:00

Nothing wrong with beans on toast.

Eggs are good.

Today we had houmous, toast and fruit.

Bloodybridget · 06/03/2021 20:06

Bacon sandwich! And a big cup of tea.

PleaseStopExplaining · 06/03/2021 20:06

If I had a normal portion of cooked for lunch I’d have a sandwich for tea, basically switching the meals as another poster said.

If I had a particularly big lunch (thinking a birthday pub lunch of more than one course type thing) I’d have a bowl of cereal or maybe even just a snack.

happymummy12345 · 08/03/2021 21:07

I'd have nothing. Dh and I only eat one meal a day, in the evening. I couldn't eat more than once a day. Might have snack type things in the evening when I'm watching telly but that's it.
The idea of 3 proper meals a day is strange to me, I don't know how anyone can eat that much.

It's called being a normal human being. Eating only once a day is not normal and not healthy.

Mudflapsarego · 08/03/2021 21:12

Soup!

Woodlandbelle · 08/03/2021 21:12

Crackers and fruit sounds good. Or banana and yoghurt. I make homemade pancakes sometimes. Or a bowl of cereal.

Megan2018 · 08/03/2021 21:13

We have our main meal at lunchtime when DD at nursery as it’s easier.
She has a snack about 5, we have a late supper once she’s in bed about 8.30. Often toasties, jacket potato, cheese or pate and crackers or something on toast.

GreenSlide · 08/03/2021 21:15

Another dinner Blush

Gliblet · 08/03/2021 21:17

If DS has a particularly big lunch and only wants a light dinner then I'd usually go for scrambled or boiled eggs and toast, a mug of tomato or vegetable soup, or a plate of cucumber sticks, chopped apple, cheese and carrot.

For me or DH it would be chicken salad, toast, omelette/frittata or cheese, fruit and biscuits.

DragonPoop · 08/03/2021 21:18

Jacket potato (with beans and cheese or tuna etc)
Tuna and rice salad,
Omelette
Sandwiches/toasties
Chicken thighs and salad
Pizza muffins
