Mary Berry puts eggs in her scones

I just followed her recipe and thought it was odd when I put the eggs in. They have turned out all crumbly and not like a scone much at all. Not keen.

Do you put eggs in your scones?

I use a National Trust receipe that includes an egg. They are really good and "sconey". Apart from the recipe that uses lots of double cream (bought in error) they are the best that I have ever made- and I've tried lots of receipes.

I put eggs in my cheese scones, half egg half milk- they get a lovely rise, wouldn't do it for fruit or plain scones.

I used to make scones with egg, and they weren't very good, till I found Paul Hollywood's recipe. Game changer.

There is an amazing Guardian article from many years ago which has all the top chef’s scone recipes tried and tested. The comments are as fantastic as the article - everyone piling in with their own tiny variations. Wrong. I have a fool proof recipe that is also good frozen and defrosted. 2lbs of SR flour, half teaspoon salt, 6 big heaped teaspoons of baking powder, 8oz salted butter (proper butter not spread) 4 heaped tablespoons of sugar, UHT milk. must be UHT as it freezes better with no soggyness. literally cannot go wrong with this recipe. It makes about 36 - 39 scones.

Oh I made her scones this week (it's very rare I bake) and they were very crumbly. Just thought it was my rubbish baking

Delia taught me to cook in the 70s and 80s. Her scones have egg and actually, they're an almost identical recipie to the one my DC used in food tech at school.

I do, big fan of Paul Holywoods recipe, they are like proper cafe scones. I make my scones partly by what i have in the fridge, no eggs left, fine. you can make them without, plenty of eggs but not so much butter, also fine as you need less fat in a scone with egg in. If you put lots of fat and eggs and lots of sugar you get a crumbly rock cake not a scone. If i don't have eggs i do usually put a bit of yoghurt in as the acid helps them rise and i dont put eggs in girdle scones (non Scots won't know what they are!).
Recommend bread flour not plain flour.

Scones with egg are /were known as Queen Scones.
Scones don't need egg,but some people prefer it, and AnneLovesGilbert they definitely don't need vanilla extract. Bleurgh! What is this obsession with putting vanilla into cakes?

Scones are the simplest, easiest basic cake. But also overthought.

The only egg I use with scones is a bit of eggwash. I wouldn''t use egg in the actual recipe.

I read the Guardian article linked earlier. Quite interesting. I must say, I don't roll out the dough, I just divide into half, shape into two large rounds, and mark each round into quarters. Once cooled, these rounds can easily be broken into quarters.

I also never bother sifting flour. I weigh it into the bowl, then just whisk briefly. Sifting is about adding air, and whisking does that job too.
