Mary Berry puts eggs in her scones

I just followed her recipe and thought it was odd when I put the eggs in. They have turned out all crumbly and not like a scone much at all. Not keen.

Do you put eggs in your scones?

Sifting flour was to remove any stones,obviously not a problem now. It doesn't add any air.
Scone dough should be flattened gently with your hand; rolling pins are too heavy.

Just checked the recipe on the shelf and yes, Bero Rich scones have egg in it! The only recipe I've ever used, my Mum uses it too. Had no idea we were deviants!

with gf I tend to use eggs instead of milk in cake recipes so using eggs instead of milk in scones - hmm- must try!!

This has blown my mind, genuinely.

I did not know people made scones without eggs.

I whisk an egg with milk and use that mixture as the binder, and what's left is brushed on top.

I am going to go Google all the scone recipes you must be using.

Am sat openmouthed!

I don't even roll mine out I just scoop a scone sized lump of dough or and pop it onto the baking sheet, i quite like the rustic effect and it saves time and cleaning of surfaces.

I simply cannot get scones to rise. I can bake decent cakes, bicuits and bread but scones defeat me.

I use self raising flour with an extra teaspoon of baking powder in for good measure. Without the baking powder they look quite sad, with it they are happy risen things.

I also have to force myself to roll the dough much thicker than feels natural or even though they rise they still aren't tall.

I swap tbsps for tsps of marmite. If you like it, you want to taste it.

Not sure how big they make them but I get about 12/13, not 8, and they’re huge. Use a serrated knife to cut the log.

my recipe is similar to the GF one - but no vanilla, that's heinous. No egg, don't roll just shape & handle the dough minimally. SR flour with extra baking powder plus the lemon juice helps the rise but not over working/rolling the dough is the main trick.

My Good Housekeeping Bible (c.1995) gives me a basic recipe (no egg) and then one of the variation is essentially "posh version" and includes the egg.

I don't think I've looked at another scone recipe in the last 25 years.

YY to very deep, barely-rolled dough being the secret to risen scones.

Re scones not rising, I cut my mixture into rounds then use one of those bun tins with sunken circles (iykwim). They have to rise as they can't go sideways
