Inspiration please!
Tomorrow will probably be a roast, but something interesting for this evening? 2 fussy children (I can adapt for them) and 2 adults.

Steady and creamed spinach tonight. Roast pork dinner tomorrow

cultkid · 30/01/2021 10:50

@TierFourTears
Hahahahaha that sounds like something my husband would do

He never cooks anything fresh or from scratch
Constantly complaining that I am a far superior cook (that is true ) and that I would complain about his cooking (that's not true I would love him to cook)

So sick of food atm, even though it's normally a hobby of mine

We had lamb chops last night with salad wedges and padron peppers i charred

Tonight, I don't know as the shopping is coming late and the fridge is bare so likely frozen food which I find really unappetising Tbh

Tomorrow I'll make lasagne and freeze a few as they are so loved in this house

Might give one to the neighbours too
I often sell them they are so popular actually but it's quite a lot of effort

I made nigellas chicken with orzo last week it was a big hit

Homemade beetroot and butternut squash soup for lunch. Homemade pizzas for dinner.

RoomAtTheEndOfTheWorld · 30/01/2021 10:57

Steak & chips tonight with onion rings, peas & homemade peppercorn sauce (trying to pretend we're at the local steakhouse Grin)
Tomorrow going to try slow roast pork with all the usual roast dinner bits which I've never done with much success so fingers crossed!

Crazycatstory · 30/01/2021 10:57

@badpuma

We had a Persian food box delivered yesterday with dips, bread and kebabs. It was utterly lovely - supposed to feed four but will comfortably do 8 - we're having it for dinner today too with more salad.
Please can I ask where you got this from?
endoflevelbaddy · 30/01/2021 10:58

We're having a recipe from Jamie Oliver's 7 ways, a pork fillet wrapped in pesto, sage leaves and prosciutto with gnocchi & peas baked in a cheesy sauce. Just looking for a link. Discovered the kids loved the pork fillet a few weeks ago, and easy to do with blander sides if the gnocchi isn't something yours would eat.

Crazycatstory · 30/01/2021 10:58

Oh, and tonight is salmon roasted with asparagus, peppers and tomatoes, tomorrow is pork belly roast on fennel and onions.

linerforlife · 30/01/2021 10:59

Last night was jerk pork steaks, sweet potato mash, roasted tomatoes, steamed broccoli and cauliflower. Tonight is enchiladas with wedges and salad and tomorrow is brisket in ale with standard roast pots, yorkies and veg.

Equimum · 30/01/2021 10:59

We did homemade pizza last night.
Tonight we are having homemade falafel, wild rice, humours & toast veg.
Tomorrow will be roast.

linerforlife · 30/01/2021 11:00

@badpuma I'd also be interested in where you got the box, I'm missing Persian food!!

ilovebagpuss · 30/01/2021 11:01

Burgers, homemade slaw, corn on the cob tonight and then I’ve got a joint of beef but it’s a cheap cut so I’m doing stroganoff tonight in slow cooker for tomorrow with rice and some sort of flat bread.
I did a roast last week mainly so I could portion a plate for my DF and take it to him but I spent half the day cooking and my DD’s just had misery faces although they ate it.
So I’m not standing in the kitchen for hours this Sunday. DF will happily have some stroganoff.

AtleastitsnotMonday · 30/01/2021 11:07

I’m doing butterflied chicken breasts marinated in garlic and herbs then grilled. Served with ciabatta rolls for those who want to make it into a ‘burger’, an apple slaw and green salad.

Spacecudet · 30/01/2021 11:07

We had a butternut squash, red, pepper, chicken and ricotta, bianco homemade pizza last night, calamari followed by Hungarian style meatballs tonight, Christmas Dinner tomorrow.

Not had gnocchi for ages, will have to have that soon.
GlumyGloomer · 30/01/2021 11:10

Today carbonara for lunch (a proper one, so the sauce is egg yolks, parmesan and black pepper. ) Dinner will be tofu fried rice, with rolled omelette to use up the egg whites left from lunch.
Tomorrow is pesto pasta for lunch and fish pie for dinner.

BearSoFair · 30/01/2021 11:13

Chicken and chorizo risotto tonight
Roast pork tomorrow

Thewinterofdiscontent · 30/01/2021 11:14

I feel your pain. So bored of cooking the same old.

I’m doing that thing Nigella made this week with the mince. I have pitta in the freezer, some tahini from failed hummus and an aubergine from low carbing ( also failed)in the fridge.
I have taken to buying pork mince instead of beef just for a difference in flavour. I put tarragon in to make “boar burgers”. Just to make it more exotic.

I’m buying chicken thighs ( cheap) and plonking different on them every week. Honey and soy and chorizo and orange have been the nicest.

bluechameleon · 30/01/2021 11:17

Tonight we are having taco boats with a variety of fillings to suit the picky amongst us: beef mince, cauliflower and chickpeas, lettuce, spinach, cucumber, tomatoes, grated cheese, sour cream, sweetcorn, guacamole.
Tomorrow I have a whole chicken to cook. I was thinking of doing it with rice but I like the look of that orzo recipe.

ErrolTheDragon · 30/01/2021 11:17

I've got a lot of dried chickpeas soaking in the slow cooker ready to make an easy curry tonight. (Just sautéed onion, red pepper, curry powder, and a tin each of light coconut milk and tinned toms). Obviously that's the sort of thing some kids might like, others won't, depends what they're fussy about. Excess chickpeas will make hummus.

Therealjudgejudy · 30/01/2021 11:21

Homemade vegetable soup last night, ratatouille and cauliflower rice today.
Tomorrow is salmon, sweet potato mash, mixed veg and parsley sauce

SillyBub · 30/01/2021 11:23

This weekend's new recipe which they'll hate and will leave me wondering why the fuck I bother for the 60 millionth time before looking up another new recipe for next weekend is a pork and cider slow cooked casserole.

dingit · 30/01/2021 11:35

@troppibambini6

We are having pork and bean casserole for dinner tonight and roast leg of lamb and apple strudel tomorrow. It's lunches I find hard and the kids are sick of sandwiches, I don't really want to start cooking two meals a day though....
Google 4 way wraps, ds is enjoying these

‘This weekend's new recipe which they'll hate and will leave me wondering why the fuck I bother for the 60 millionth time before looking up another new recipe for next weekend is a pork and cider slow cooked casserole.’

Exactly!! Why am I bothering? But DH and I deserve nice food!
