I've woken up in a baking mood. So I've made:

Toffee cake with apple buttercream
Banoffee flapjacks

I might make a quiche later.

Anyone else baking or cooking anything nice today?

We are looking forward to lamb burgers on brioche buns with homemade coleslaw and sweet potato fries this teatime.
We had some of my blueberry muffins for breakfast and I still have a savoury loaf in the freezer after having one with soup yesterday.
I’m trying all sorts of new recipes!

I made slutty brownies this week. I used Preppy Kitchen’s recipe on YouTube. They are insanely sweet and rich but delicious! I cut them into quite small pieces. Toffee abs apple cake sounds yum!

I'm waiting for a jumbo muffin tin to arrive. Then it will be individual toffee apple pies. Maybe another chocolate brownie. A pannettone custard pie. Maybe some Grantham ginger biscuits - if I can find the bloody recipe book!

Tomorrow I go out so I'll get some ready made puff pastry and freeze back some fidgit pies, maybe a beef and ale set too. I need to make something out of the frozen back bits and bobs.

I made carrot and walnut cake yesterday. Didn’t have enough icing sugar for buttercream so had to improvise with a clementine drizzle icing instead.

Please could you share the toffee cake recipe?

Ohio that's sounds delicious. I absolutely love roast chicken so am always looking for new things to do with it ...please post any good recipes you do!

We have our first Gusto box delivered today for a treat so I'm doing Fish Gyros. Although they have provided mini naans to use - what the heck? It's never going to fill us! Think I'll do some home made wedges too just in case but that obviously defeats the purpose of getting the meal in the first place.

Does anyone know if you can freeze brownies? My mum gave me a tub of homemade ones yesterday and whilst they're gorgeous they are ENORMOUS so ideally I'd like to freeze some. If I do, what's the best way to defrost? Or not?

OP I've been wanting to try making my own quiche for ages ... what's a easy tasty one to try to start with?

Yes you can freeze brownies. Just get a few out and leave them on the side to defrost - they don’t take long.. couple of hours.

I made Nigella’s chicken and orzo recipe a few nights ago, but I substituted the orzo for paella rice. You need quite a large casserole dish to fit all the ingredients in. It was delicious with a glass of red wine.

We haven't eaten the Christmas puddings yet. I might dish them up for dessert tonight. Puddings, plural, because I made them in a cakepops mold and individual ramekins this year Grin

I have a chicken to roast this evening. I've done similar one-pots to the chicken and orzo recipe in my slow cooker - heavenly, but dh has a hankering for a proper roast chicken for dinner.

Aahhh, I'll look those chicken orzo ones up.

Another nice roast chicken one is to rub a curry paste (shop bought is fine) all over the bird and roast as normal but with chunks of white and sweet potatoes and cauliflower underneath like a trivet. You need to drain some of the juices off in cooking or the veg can go a bit soggy. But it's lovely just with warm bread and pickles. Blitz any left overs the next day with a little water and you've got a lovely curried soup.

I use a version of this for the TOFFEE CAKE but just the sponge part. I add a handful or so of toffee or fudge pieces and bake in two sandwich tins.

For the apple buttercream:

Peel, core & chop 2-3 eating apples (or tarter ones if you prefer less sweet)
Melt 25g butter in a pan, add apples
Sprinkle over about 25g brown sugar & stir until apples are well coated. Cook with a lid on until soft.

Depending on taste you can then either mash the apples or leave in chunks.

Soften 140g unsalted butter in a bowl. Add 140g icing sugar & beat until smooth. Add the remaining 140g (or less if you don't like it v sweet). Fold in the apples & use the cream to sandwich the cakes together.
