Getting more veg at breakfast

Does anyone actually manage to get started on their 5 a day at breakfast? I'm pretty good at dinners, ok at lunches (albeit mostly fruit) but nothing at breakfast...

I much prefer savoury breakfasts which doesn't help, but most ideas I've found online are either sweet (fruit based) or involve a lot of prep, which isn't really realistic in the mornings!

I might be asking the impossible I realise Smile

I had a cheese omelette this morning with shed loads of spinach tossed in balsamic as a side, was yum and very filling. Cheese was 50% fat which was a virtuous bonus!

We sometimes have avocado or poached egg on toast served with homemade salsa (diced tomato, red onion, coriander, chilli).

Or fried cherry tomatoes, red onions, peppers and throw in eggs and scramble.

Tinned tomatos and lots of pepper on toast.

Throw in the oven tomatos with honey and balsamic vinegar. Go get dressed. Serve on toast or with bread.

Or anything in an omelette eg peppers, onions, courgette, spinach, tomatoes, peas ... limit is your imagination!

As pp have said - veg omelettes are the way to go!

I also make savory rice porridge and have different types of green veg or pickle with that. Common in the Asian country I'm from, but understand it might not be to all tastes!

You could always make a frittata with left over veg, then pop it in the fridge, cut a slice and heat it up in the microwave for breakfast. I often do this.

Flan dish - greased.
Add cooked veg, any will do - I usually use broccoli, chopped potato, peppers, onions...
Pour over a mix of beaten eggs (I use 3 or 4), mixed with milk.
Season
Grate over cheese.
Bake in oven - usually about 30 mins.

Lovely hot or cold.

Shakshuka is ace, and you can batch cook and freeze the sauce. Just take out to defrost the night before and reheat and chuck the eggs in.

I get my daily fruit at breakfast but for veg you could have beans, mushrooms, tomatoes, smashed avocado, just about anything that goes in an omelette...

I have literally (correct use of the word) eaten one slice of granary toast with peanut butter and a banana for breakfast every week day possibly for an entire year.
Had never considered all these options and have just put smoked salmon, feta and eggs on my shopping list as have decided I am officially boring!

Tomatoes on toast yum! Eggs ,Bacon ,and Avocado .Or Mushrooms .What about a nice smoothie from veggies in fridge ,or spring onions chopped small and in an omelette?

Well nuts are good for you and banana is fruit! Over the same period I've just had a bit of toast with spread and marmite!!

Definitely need to try some of these, maybe a couple of times a week or something to start. Some great ideas!

Green smoothie - i have avo and spinach but you could swap in peas for the avo. Celery/kale if you're feeling worthy.

Breakfast frittatas - Ive never made them but I see other people do batches of mini sort of veg omelettes in muffin tins and that looks like a good idea for a quick savoury breakfast.

Okay, feel better re 5 a day issue but this has reminded me that I have slipped back into breakfast of toast with marmite/jam/marmalade and the odd bit of porridge. can't eat eggs in the morning as it makes me ill which is annoying. But I used to be good about the odd beans on toast or bacon and avocado on toast. Must make more effort. DS loves mushrooms too so he'd be up for mushrooms on toast and would break him out of his current standard breakfast of weetabix and bran flakes with a handful of nutty granola tossed in. Could be worse, but I do feel it could be better too!

I make a different large smoothie each morning. This morning was mango, pomegranate, blueberries, strawberries and high protein yogurt.

Then I normally have one portion of veg/salad at lunch and between 2 and 3 portions of veg with dinner.

What's stopping you from having, well, vegetables? Even if it's just a bag of micro steam veg and bag of micro steam rice for quickness?

I quite often make this as it's quick:

Baked egg, spinach and tomato

But I also will eat anything for breakfast, leftover stirfry, curry, casserole, salad! I'm much more likely to eat well if I treat breakfast like any other meal. (I am not particularly virtuous btw, I eat a lot (A LOT) of pizza and cake.)

I like boiled or poached eggs on a pile of roasted cauliflower. Not just cauli, I pop a shallot, carrot, some herbs or whatever in too, if you like you can puree with some ricotta, chicken stock, pinch of chili flakes. It's a bit like mashed potato. Broccoli also good this way.

When I was lower carbing I really enjoyed leftovers for breakfast. Adding some avocado or tomatoes, lettuce and feta was nice too.

I leave a big bowl of mini peppers , mini cucumbers, radishes , cherry tomatoes etc in kitchen and we all just have those as and when throughout the day. The colourfulness is v tempting.

Carrot sticks and houmous. The lazy no cook breakfast solution.

Or whizz up some spinach and apple for a quick smoothie.
