Getting more veg at breakfast

Does anyone actually manage to get started on their 5 a day at breakfast? I'm pretty good at dinners, ok at lunches (albeit mostly fruit) but nothing at breakfast...

I much prefer savoury breakfasts which doesn't help, but most ideas I've found online are either sweet (fruit based) or involve a lot of prep, which isn't really realistic in the mornings!

Loads of delicious ideas on here! I buy Alvelle Gazpacho and have a glass in the mornings, wakes me up nicely and one less coffee!

I quite often have:
Spinach sauteed in butter (& garlic if I'm not going anywhere) with tomatoes & soft boiled egg.
Mushrooms (must be done in butter, not oil).
Can't stand omelette for some reason, but I like scrambled eggs.
Sauteed leeks.
Sauteed kale.
Grilled tomatoes.

Maybe experiment with some different herbs & spices. I sometimes put a tiny pinch of turmeric in my scrambled eggs, or a little grating of nutmeg in sauteed mushrooms (which also need ground pepper). Oregano on grilled tomatoes.

I often make smoothies in the summer. Fruit (banana, raspberries, or cherries) from the freezer, yoghurt, big handful of spinach. Enough water to make it drinkable. Or, pineapple, mint & half a cucumber.

Sometimes, yoghurt, fruit & granola/muesli if I want comfort food, if I'm not feeling well. Sometimes in the winter I make porridge & put frozen fruit in it - frozen strawberries or raspberries make it go a very pretty pink.

I have a small Kilmer jar that I hung all my omelette ingredients in the night before. Come down in the morning, turn hob on under pan and add a knob of butter. Shake jar, then add to pan when hot. I generally have long enough to boil the kettle, empty washing machine, tumble dryer and dishwasher and feed dogs and cat before it is ready.

Big fan of bread, cheese and cucumber for breakfast. Maybe some black cherry jam. Yoghurt. Sort of thing you'd eat from Germany to the middle East really.

I ate leftover homemade moussaka for breakfast yesterday, straight out of the fridge. It contained lentils so of course on the MN list of approved food.

I was starving hungover though Wink

Home made vegetable soup is popular here, prepared beforehand it's quick to heat up a portion on the hob or microwave. Potato & leek is a favourite, and in the summer I blend it and serve it chilled. Gazpacho is good too, a real "wake me up" taste!

Shakshuka is quick and easy on the hob or in the oven, also piperade if you do the prep the night before.

I have fruit for breakfast, which counts as one.

Then two veg for lunch, a different piece of fruit as an afternoon snack and then two veg for supper.

Normally a tangerine, apple, banana, grapes, plus veggie soup or a large salad for lunch, and tonight, a tomato and celery based pasta sauce with a large handful of olives and capers.

I often have a salad and avocado in a bagel

Green (spinach or kale) smoothie

Beans and veggie fry up. Tomatoes mushrooms etc

Like PP said, it doesn’t have to be “breakfast food” cereal and eggs are advertised by the food industry

I quite often have a chopped up boiled egg with lots of chopped/grated salad and veg in a bowl for breakfast. Can all be prepped the night before and left in the fridge.
Sees me through till lunch easily.

Blimey, veggie breakfast revolution! I think mushroom and spinach variants are my starting point. Just feels weird having broccoli for breakfast, and as for "think muesli but with cabbage" Shock

If you want something you can make ahead these mini frittatas are lovely - same site does great veg muffins.

You're not alone @AtleastitsnotMonday, I also really like tinned tomatoes on toast. Also sliced (not smashed) avocado.

Omelettes and scrambled eggs also good with any mix of mushrooms, onions, spring onions, peppers or tomatoes too.

Scrambled egg with tomatoes spinach and basil sometimes with a bit of crumbled feta and a dollop of pesto.

I often have griddled tomatoes on toast but if I fancy I change I have a BLT without the bread - shredded lettuce, cooked tomato and 3 bacon medallions. That and a glass of juice and I’ve got 2 portions in and I’m more likely to make an effort to eat more fruit and veg throughout the day.

At the weekend I roast a tray of chopped vegetables, then in the morning I put a little ring of them in a frying pan and crack an egg in the middle. Sometimes add cheese on too. It's delicious.

I often make "torradas/toastadas" on a morning. Rub garlic on toasted bread, then rub some olive oil in, chop up cherry tomatoes and pile on the bread, and sprinkle parsley and/or spring onions over it. Very tasty and healthy.

I can only really do baby spinach (either in a smoothie, an omelette or scrambled eggs), avocado, tomatoes, asparagus (with eggs) and mushrooms at breakfast. I've eaten purple sprouting broccoli in the past but it just felt a bit odd!

I like a cheese, spinach and cheese toasty, I also often bung a handful of spinach in with most of my smoothies, most fruit is flavourful enough that it disguises the flavour of the spinach and so it's irrelevant if spinach "goes" with the other ingredients!

OK I will admit this is not something I eat but what my oldest brother (incredibly healthy at 68) eats every day. try not to shudder as it actually is quite good.

OK - so think muesli....you know, oat flakes with added nuts, dried fruit and topped with really nice yoghurt. Now instead of muesli use shredded raw cabbage. I know, I thought the same. It's actually quite good and I think that if I lived on my own I might have it a couple of times a week as I like cabbage and the rest. But DH even has a ban in place for cooking onions for breakfast so he would probably burst a blood vessel if I sat across from him with a bowl of cabbage while he has his fry up. I'm actually keeping this prospect of inflicting on him a serious injury for such a time as he seriously ticks me off.

I like eating sunny side up eggs for breakfast 🍳 and sometimes cook some frozen spinach to go with it
