Just a bit stuck in a rut, especially this year. Looking for ideas.

This week we have had:
Stir fry veg & rice with beef burgers/veggie burgers
Chicken nuggets & chips
Jacket potato, tuna & broccoli
Pizza
Takeaway curry
Roast chicken

Next week I'm planning:
Spag bol
Chicken fajitas
Pasta, pesto, bacon & broccoli

Probably nuggets & chips & jacket potatoes again.

Pescatarians over here although we eat mostly veggie meals. We're having:

M: Breaded haddock, mash, minted peas and gherkins

T: Mushroom and leek risotto

W: Black dal, gunpowder potatoes (Dishoom recipes) and saag bhaji

T: Dishoom leftovers

F: Jerk sweet potato and black bean curry with coconut rice and pineapple/chilli chutney

S: Aubergine koftas, naan and chutneys

Sun: Pub for a roast!

M - leftover meat and veg from Sunday roast made into a pie.... I have shortcrust pastry that needs using.

T - pasta with vegetable sauce (basically tomato, garlic, onion, courgette and aubergine blended together.... I keep loads in the freezer as it's an easy way of getting veg into the kids.)

W - cheese toasties and soup.

T - peanut and cashew stir fry.

F - tapas night

S - hot dogs

S - butternut squash lasagne

Monday- chicken curry and naan
Tuesday- fish fingers and chips
Wednesday- salmon teriyaki, vegetable tempura and Jasmine rice
Thursday- tacos with salad
Friday- takeaway night
Saturday- roast chicken, spuds, broccoli and carrots
Sunday- whatever my dad cooks when we visit him!

I use gusto boxes, it works out a bit more expensive but I don't have the time to constantly think about what's for dinner

Actually, a hint from me, for meal planning is to get a family calendar if you can, with one column more than you need
Ah brilliant idea. We have one of those calendars and I still have a -blank - column for my grown up stepsons (in their 30s and with their own houses now!) I'm going to make it the menu column. Thank you!

Tonight we had jacket spuds with roast veg.
Tomorrow: bubble and squeak with eggs
Tues: stir-fry
Weds & Thurs: veg chilli
Fri: soup

We eat pretty simply most of the time because We make it all fresh and it is good/tasty but we chose to give up hard-work food quite a few years ago.

Wednesday – beef casserole & noodles
Thursday – Chicken & Leek pie, roasted veg
Friday – Toad in the hole, chips and veg.

Freezer fodder in order to make way for the turkey.

When I cook, I cook extra, and put it in the freezer, it's got to the stage we could probably eat out of the freezer for weeks as it's jammed with no room for Christmas goodies. So it's freezer fodder for us until Christmas

Tomorrow - DS is making Thai pork balls in food tech so we'll have those with noodles.

Tues - minute steak & onion gravy barms with fries

Weds - Homity pie (I try to do no meat meals at least once a week)

Thurs - salmon & risotto verdi

Fri - chicken tikka rogan josh with naan breads

Sat - might have a Chinese starters kind of night - crispy duck, prawn toast, won tons, spring onion parcels etc.

Sun - something in the slow cooker. Maybe peanut butter chicken.

What is a gravy barm, please? I have no clue but it sounds delicious if it works with steak and onions!

This week we are having
Salmon with veggies rice and roasted tomatoes / peppers
Egg and leek bake
Roast beef with veg etc
Chicken and chorizo pasta bake with crusty bread
Spanish chicken with pepper rice
Not in that order and liable to some alteration .

Literally just done the week meal plan. For me and 4 yo DS who has a light (warm) tea at nursery- it’s a bit blah because we’re moving in a couple of weeks so trying to use up freezer stuff-

Mon “picnic supper” with hummus, olives, bread, crudités, ham, cheese etc

Tues- Pasta with sausage and tomato sauce for him/ puttanesca with olives, anchovy and capers for me. Salad for both of us.

Weds- Same as Tuesday. Might do a cheese based sauce rather than tomato.

Thurs - a sort of-chicken saag made with frozen spinach and coconut cream to make it milder for DS. Probably with rice and cucumber salad.

Fri- the saag again - with homemade flatbread instead of rice to jazz it up.

Saturday- Freezer tea (some frozen protein, potato waffles and frozen veg)

Sunday- bacon and leek risotto with whatever veg is in the fridge roasted and put on the side ... DS hates risotto so he might get the same stuff mashed into a jacket potato and put back into the oven (like a big potato skin).

We always have the same breakfast options:

  • unlimited fruit
  • low sugar cereal
  • Greek yogurt
  • toast and jam or cheese toastie
  • brioche
  • boiled eggs

He usually picks two or three of those to make a breakfast plate.

I don’t eat lunch at work - might grab a snack from the fridge around 2. Weekend lunchtimes tends to be stuff like frozen pizza/ beans on toast/ picnic style or fish finger sandwiches, with a random veg and fruit so he doesn’t get scurvy....

T: Gochujaang chicken, white rice, sautéed greens
W: salmon poke bowls
Th: roast chicken and root vegetables
F: pasta carbonara with caramelised courgettes
S: slow roasted pork belly with cider sauce, apples, spring greens
Sun: sausage calzone, salad

Loving the inspiration here! I’ve recently started meal planning - do it first thing on a Sunday morning and then get the Big Shop in (always big as have 3 teenagers in the house as well as DH & I). So good to have everything in the house and be organised. This week we’re having:

Mon: smoked salmon & spinach pasta
Tue: sweet & sour chicken
Wed: Moroccan spiced mince and couscous
Thu: quiche & baked potatoes & coleslaw
Fri: pizza

Also planning to make mushroom soup and lentil soup for lunches.

If I don't meal plan, I have nothing to actually cook. If I bought what I fancied I would just end up with bread, cheese, booze and crisps. Meal planning keeps me on adult tracks and stops the snacks and takeaway lifestyle I veer towards otherwise.
