Following with interest! We eat meat but only poultry. I make a lot of veggie curries, everything else is chicken or fish. But my kids are super fussy - hate spices, veggies that aren't puréed and hidden etc. I end up making eg a plain chicken tikka masala with a flavoursome veggie curry. The rice has to be plain rice 🙄
They like roast chicken but don't like nut roast so when we make that I do a foil wrapped chicken breast each for them. Risotto - ok if the onions are cooked muchly then blended. They just hate 'bits' in food!!!

AlwaysLatte · 06/12/2020 18:21

I make cauliflower cheese one day every week and started doing the Jamie Oliver one where all the leaves and stalks are also used, plus more mustard than I normally put in. Was delicious!

Dd1 has decided to be veggie this week so we are supportive and having....
Nice to hear that, much nicer than another thread on here where a parent wasn't being at all supportive.

RosesAndHellebores · 06/12/2020 19:27

RemusLupin I quite agree about the faff which is why I usually make bolognaise with 5lb of mince: enough for 2 spag bol dinners for 4 and two big lasagnes for 4-6. One for a weekend family supper and one for the freezer.

Midweek Sainsbury's test the difference decanter into a square oven dish, with a chopped mozzarella ball tucked in, sliced toms on top and a sprinkle of cheddar works wonders after a long day!

We had roast chicken today, so I'll make a pie tomorrow. Plan B would be enchiladas (boosted by a tin of black beans and a pepper)

We need an early supper on Tuesday, so it will be ragu and pasta (batch cooked on Friday).

If there is any chicken left we'll have chicken ramen noodles (otherwise I'll defrost some frozen prawns)

I'm trying to make space in the freezer, so we'll have steak, ratatouille (batch cooked last week) and make some potato wedges with the King Edwards we didn't need in the roast.

I might make a chocolatey chilli for Friday (possible with guacamole if I go shopping).

I've finally realised that I really don't enjoy or need 'proper' meals every evening, I am perfectly happy with cheese & crackers or a toasted sandwich. Tonight we are having moussaka, tomorrow & Tuesday DH can eat up something from the freezer ... I gave chilli & a chicken casserole that need eating, I will have a snack type meal. I might cook something Wed; Thursday DH is collecting DS from Uni so hopefully they will eat out. Steak fajitas on Fri & takeaway next Sat. Roast chicken on Sunday.

I feel much more relaxed about not having to meal plan & prep 'proper' meals ... my DH does cook as well so he can share the burden. Just so fed up of cooking most nights after 32 years of marriage Grin.
