What do you have for dinner when you want to feel healthy

I feel like I need to feel some goodness and nutrition seeping into from my dinner, so need some inspo! Ive been having a lot of chips or potatoes as sides and not enough veg.

What do you have when you feel like this?

Something that involves lots of brocolli!

Maybe a stir fry with loads of veg.

Fish is my go to. I really like a fresh tuna steak, griddled with lots of black pepper and balsamic vinegar. Served with broccoli, green beans and vine tomatoes all cooked in the griddle pan.

Lots of colourful vegetables in a dish. Not only pretty to look at, but also cheers me up in grey cold winter days.

I do a spicy sausage and bean stew or bake. Grill sausages, oven bake them in with a tin (at least one) of mixed beans, a tin of cherry toms, a couple of carrots chopped up, an onion, peas. Sids of asparagus or tender stem broccoli (or both is need using up)

Or a Thai green stirfry with every veg I have in, plus cashew nuts

Not so much healthy go to , although not unhealthy, when we are bored of eating, our go to is a tomato sauce made with oven roasted tomatoes, do them when they are just shy of looking suspect, then freeze them until required, marry them with tin of decent chopped tomatoes, loads and I mean loads of garlic and fresh coriander, with spaghetti.

Stir-fry always makes me feel virtuous. Grin

We generally have it on a Monday to use us the leftover roast.

Disclaimer it is they only day of the week I truly plan as I used to hate as a child knowing that if it was Monday it was meatloaf, etc., etc.,

Oh and stew every Wednesday, and Bolognese every Saturday.

I am scarred. Grin

Veggie / vegan curry with what's in the fridge but ideally sweet potato, cauli, carrots, onion, peppers, broccoli
Homemeade veggie soup
Fish, broccoli and leeks
Quorn stir fry with as much shredded veg as I can fit in the pan

None of that is grabbing me. I'm in a bit of a junk rut. I've been having wraps for dinner with various sides.

Last night I had 2 veg burger wraps (the pea & sweetcorn ones, not soya) with lettuce, cucumber & cherry tomatos with mayo and Frank's wings sauce with sweetcorn and air fried wedges (homemade, not out of a bag).

The day before I had 2 iceland tiny chicken chargrill wraps with mayo, franks, lettuce, cucumber and cherry tomatoes with chips and a pizza sub.

The same the day before.

The day before I had Iceland party food & wine. Mini steak bakes, weird vol-au-vents, mini fish & chips.

When we went in Iceland we got tomato turkey twizzlers. I've never had them so thought they'd be worth a go 😂

I was going to go out for veg but might just go shopping tomorrow.

I'm thinking having onion tortilla, a tiny jacket potato (size of my palm), sweetcorn and lettuce, cucumber & cherry tomatoes tonight.

That's still not grabbing me much either though.

A buddha bowl - I vary the toppings a lot, but it's usually a big scoop of grains (quinoa/couscous/bulghur) with 5-6 different vegetables on top, like cherry tomatoes, roast squash or sweet potatoes, avocado, broccoli, and drizzled with tahini dressing. I'm not veggie or vegan but I like having a meat free dinner a couple of nights a week.
