I feel like I need to feel some goodness and nutrition seeping into from my dinner, so need some inspo! Ive been having a lot of chips or potatoes as sides and not enough veg.

What do you have when you feel like this?

When I want to be healthy I just eat the same things, only i reduce the carbs and add lots more veg.
So instead of fajita chicken, 2 large tortilla wraps, grated cheese and a small salad, I'll have fajita chicken, 1 small tortilla, grated cheese and a large salad.
When I want to lose weight I have fajita chicken, 1 small tortilla, a small amount of portioned grated cheese, and a large salad.
I don't mind reducing carbs, I love veg especially salad and my greens, but I hate limiting my fats. I love dairy (especially cheese!), mayo, avocado, olives, nuts.

Spinach ommlette, wilted spinach with lots of pepper and salt, 3 eggs, a grate of parmesan, finish under the grill and it puffs up. Best served with buttery wholemeal toast but could go for salad for extra health points
Easy and makes you feel looked after

Halloumi or falafel salad in a wholegrain pitta with sweet chilli sauce. Though usually reducing my portion of whatever I want to eat and adding a big side salad dressed in balsamic or lemon juice always makes me feel healthier!

Roast Mediterranean veg, half a pack of microwaveable grains (or a wrap) and scrambled eggs or chicken or cottage cheese.

Roasted cauliflower with chickpeas, tomatoes and harissa, with parsley and pomegranate. It's a Nigella recipe and easily 4 portions of veg. Delicious Smile

Homemade soup with a range of veg thrown in...

Veggie Thai green curry with brown rice...

Huge veggie stir fry.

Salmon with lots of vegetables.
Frittata

EvilPea · 24/11/2020 16:34

Roasted butternut squash, red pepper and onion with harissa sprinkled over it. Stir in a rice Quinoa / seed bag. Dish up maybe grilled halloumi on top. With a Lime yogurt (Maybe coconut yogurt) goo.

Baked salmon with roasted veg (cherry toms, mixed peppers, red onions, maybe courgette or aubergine) and couscous. If I make extra veg I have it the next day on a wrap with humous as well.
A veggie based curry (I get the simply cook boxes and they have lots of good ones).
Homemade soup with fresh bread.
A posh ready meal (one of the healthy ones with at least two veg portions in).

I despise most vegetables apart from sprouting broccoli. So something with that would be chimichurra chicken (roasted) and baby roast potatoes. Chipotle mayo on the side. Probably not really healthy by most people's standards.

Another thing that we have are these chilli salad bowls.

I've made them with 3 bean chilli tonight as we didn't have any beef in Smile

AlrightTreacle · 24/11/2020 22:54

Salmon and roasted veg (courgettes, peppers, red onions, cherry tomatoes).

BritInAus · 25/11/2020 00:21

Yep, salmon with roasted veg or salad (depending on season/weather) OR some form of buddha bowl.

I really like doing a Japanese-type one: usually salmon (either fresh, smoked or the hot smoked fillet) with a small portion of brown rice, edamame beans, any kind of salad (usually avocado, grated carrot, sliced cucumber, some blanched brocoli), then on the top any vaguely-Asian type toppings - usually a roasted sesame dressing and some extra sesame seeds.

stayathomer · 25/11/2020 00:32

Fish and rice or for example an omelette and salad. Anything without pasta spuds or chips really!!

StillMedusa · 25/11/2020 00:57

I'm veggie with leanings towards vegan.
Tonight it was plant based burgers with sweet potato mash, broccoli and some rndom stir fried veg..peppers, onion and courgettes. Tasty and nice!
However I may have ruined that with a couple of Asda vegn mince pies Grin

JovialNickname · 25/11/2020 04:34

If you've got the pennies for it.... smoked salmon and avocado. Very virtuous, good brain food and tastes delicious!

Gingerkittykat · 25/11/2020 05:23

Shakshuka, loads of veg and an egg for protein.

A red lentil bolognese although lately, I've been lazy and just eat the sauce with cheese and no pasta.

This is probably cheating but a Japanese take away meal. The simple chicken or tofu salad is about £7 and has good protein along with loads of lovely veg and kimchi.

I ate a full tin of custard last night so need to get some healthy eating on the go to make up for it.

Cantbelieveit101 · 25/11/2020 05:35

meat and at least 4 serves of vegetables.
cold meat and salad
Grilled fish and vegies

SexyGiraffe · 25/11/2020 05:39

Big salad - make the focal point something like avocado, haloumi or falafels and have a good mix of chopped veg with a drizzle of olive oil.

HeronLanyon · 25/11/2020 05:46

I have spinach because when I’m feeling that way I generally need iron I think. I do a spinach and chickpea dish with lots of garlic and hot smoked paprika. I can almost feel the goodness getting into my blood stream !!!
