What can pesto be used for apart from stirring into pasta ?

Just that really. I'm sure there must be other culinary possibilities and there's more than one kind of pesto; I usually get the traditional green variety. Thankyou.

A thin layer of pesto on top of a cod fillet, wrap in Parma ham. Bake on a wire rack above cherry toms and some garlic. Serve with mash. Gorgeous!! And easy as.

As we clearly have many pesto fans here, may I ask what brands and varieties you buy ? I don't buy it that often but when I do I get the ordinary Felipo Berio (sp) - it's made with olive oil whereas a fair few use sunflower oil instead. I don't remember buying red or chilli pesto but I'll bear them in mind.

this gorgeous chicken, squash and pesto lasagne

with chicken tomato and creme fraiche.

I only buy the fresh pesto from the fresh pasta section. The long life jarred ones never taste basil-y enough for me.

I also make Delia’s pesto rice salad but always make my own pesto for this which is even lovelier.

To make the breadcrumbs stick to the chicken for homemade chicken nuggets

Mixed with turkey mince and cooked rice as a stuffing for peppers but also good on it's own.

griddled slices of ciabatta, rubbed with a garlic clove, cover with slow roasted vine tomatoes, then burrata, drizzle loosened pesto over the top

spread onto the part-baked pastry case for a quiche, top with whatever veg you're using, then pour the savoury custard over, it rises through the filling as it cooks -(its fab with grilled courgettes and onion with parmesan custard over it)

top quorn fillets with it before roasting

use a baguette as a pizza base, spread with pesto, top with mozarella and tomato

I sometimes use it on a pizza base, and make pesto crumbs to go on top of fish. Have also used it to stuff chicken along with mozzarella. DS has it with cheese in a toastie.

I'm afraid not! I've only ever bought the ready-made version in a jar. However, I've seen Keith Floyd use a very authentic-looking pesto on one of his Italian cookery programmes. He demonstrated the initial method of mashing up pine nuts, garlic, basil leaves and so on with a mortar and pestle, then freely admitted the finished article wasn't his work but that of his home economist. I think the other ingredients are pecorino cheese and extra virgin olive oil - I could be wrong.

I got a recipe form mn a few months ago.

chicken, cooked, then a sauce made of pesto cream (or was it creme fraiche) and poured over chicken, then brocolli blitzed to breadcrumbs as a layer on top, topped with cheese.

The chicken and sauce was amazing. I have changed the topping though as the brocolli wasn't great

@BreakfastOfWaffles could you tell me more about this tart? I have some asparagus I was to roast on a sheet pan but maybe a tomato and asparagus puff pastry tart may be better. :)
