It might be better to list what meagre ingredients you have op and we can suggest a meal?

It's funny that people's idea of "no food in" is actually quite a lot of food.. eggs, pasta, cheese, tuna, veg, pulses, sauces etc. Grin

Red lentil Dahl, pasta with whatever bits are in fridge (tonight it was the end of a pesto jar, cream pot, spinach bag and some tomatoes), noodle stir fry, egg fried rice, Spanish omelette...

Stage one - not much food and no time
Beans on toast/pitta (with capers)
Pasta with yoghurt Parmesan and garlic
Pasta with jarred pesto
Omelette with cheese/fried egg on toast/garlicky mushrooms on toast
Homemade hummus and pita with a tomato if i have.
Tinned soup/Dahl and bread
Chips from takeaway on way home - dire straits

Stage two a bit more of both Food and time (tonight)
Spaghetti with garlicky tomato sauce
Baked pasta garlic tomato mozzarella thing
Grilled cheese and tomato thing
Basmati with Thai red curry paste coconut cream and something green of i have it (brocolli best)
Mashed tats (if have) with left over veg either on side or mixed in and fried
Noodles stir fried with whatever veg have in plus coconut cream and some kind of paste/chilli

Pasta salad- pasta cooked and rinsed in cold water, for the sauce I mix mayonnaise and pesto and throw in a tin of sweet corn.

Me - Pasta with grated cheddar cheese. God I love that.

  • I always keep jars of tomato sauce or pesto when I am WRECKED and can't face things! (But also trying to be good and not order food in)
  • scrambled eggs drizzled with olive oil and rice wine vinegar (so yum), plum tomatoes and toast
  • coconut milk, chickpeas, jar of patak - always have them to make up a quick curry
  • mince fried with onions and served with chips

Otherwise something like a jacket potato and beans or fish fingers. They tend to be lurking in the freezer.

Curry. I have all the spices. So if I have can of tomato or coconut milk, I make curry with stuff we have.

This one takes a bit of effort
Veggie mush
I boil up potatoes (or use left over mash)
Carrots, sweet potato and grate.
Whatever I have .
Fry some onion and then mix with the grated veg, maybe add some kale or greens.
Sprinkle with cheese
Put in the oven until it’s bubbling.
Serve with a poached egg.

Rice (I like whole grain as it is more substantial) with red lentils cooked together in water (no salt), In separate pan, onion, olive oil, any veg going spare, say peppers, mushroom - sweet potato sliced longways cooks really quickly - add herbs, soy sauce or balsamic vinegar, maybe tin of tomatoes or tomato paste, or whatever you have to flavour. For a touch of heat a little smoked paprika powder goes a long way. Despite no meat this is high protein.

Sliced potatoes and onions, layered with grated cheese. Put a little bit of milk in and bake until cooked through. Lovely.

When I really really have ‘nothing’ in (never) or really really can’t be bothered -
Cheese and crackers
Yoghurt with some cocoa/fruit (!) stirred in
Muesli (Always have old end of bah as I never really eat it) with yoghurt
Toast and marmite
Noodles with garlic or herbs and soy sauce
Cold baked beans are great !

a stir fry always have a spare bag of ready to wok noodles, tinned lentils and chick peas in the cupboard, always have frozen chicken breasts in the freezer, add sweet chilli sauce sorted
