Stir fry - using up whatever random veg we have left and any protein available (I usually keep some tofu in the cupboard or bung in chicken left over from roast etc)

Cut it up - stir fry and whack in some soy/oyster sauce/ tamari and job done.

Or veg soup - again a clean out of the veg box plus some stock, throw in some canned chickpeas or lentils - blend and done.

My 2 failsafes are either a tin of tuna or mackarel stirred into basmati rice & tinned sweetcorn and topped with hot sauce OR pasta with tinned toms, sweetcorn & salad cream.

You may think i'm weird but if you tried them you'd be on board!

Store cupboard curry.

Chick pea simmered in coconut milk until tender. Onion fried in oil and a tablespoon of pataks curry paste. Mix together and serve with rice.

Scrambled egg on toast with baked beans

Chorizo and tomato pasta - pretty much per lovelybranches but with pasta instead of chickpeas, and I usually add some frozen peas in too

“Parmesan chicken” - rub olive oil on chicken breasts, add some garlic purée, then coat in grated Parmesan. Bash it all in with a fork. Bake in the oven. Serve with some sort of potato/oven chips, and either frozen peas or tinned sweet corn. Can also be sliced up and used in a salad.

I feel like this thread will come into its own as more and more of us go into lockdown!

Veg soup with anything at the bottom of the fridge/freezer.
Veg curry, ditto
Pasta, olive oil, cheese.
Scrambled eggs.

Soup. Usually have some form of vegetables in and stock. Poor man's pizza, usually have bread, cheese, tomato purée and jars of things such as olives to make good toppings. Omelette, usually have eggs and cheese in.

Lentil and vegetable soup, and cheese scones
Tuscan bean soup - we always have tins of cannellini beans and Savoy cabbage in the freeze
Vegan burgers made with onion, red kidney beans, cannellini beans and spices
Jacket potatoes with baked beans and grated cheese

Something like bean chilli, chickpea curry, minestrone soup, fried rice or bog standard pesto-pasta-peas or tomato sauce spaghetti.

Can pretty much make most things from some cans of tinned tomatoes, some tins of beans and some old veg, and if you have garlic you're golden.

Pasta with Philadelphia (or Aldi soft cheese in our house)
Tuna pasta
Pasta and passata. Either leave it tomato-y or stir in cheese to make it tomato and mascapone-esque.

Spaghetti with olive oil and chilli flakes (and any cheese knocking around the fridge). Or pizza - there’s always ingredients to make pizza of some description.
