What do sweet potatoes go with?

I've never cooked them before but have seen a recipe on Pinterest for them that sounds nice. They're thinly sliced & baked with parmesan & thyme (and a couple of other things I can't remember).

What would/do you serve them with?

I like them diced and roasted......then

Add to a tortia with meat and salad.

Sprinkle over a big salad.

Serve with lamb cutlets and salad.

Served with spiced chicken.

Mix some sweet chilli sause into sour cream.
This makes a gorgeous dip to drizzle over them cubed and roasted

Lovely added to root veg soups.

Sweet potato, spinach and chickpea curry with coconut milk is delicious. I use a mild Thai curry paste and sort of make it up, but there are loads of recipes eg:

With halloumi in a salad, as wedges with any meal - steak, chicken etc. I also chuck it in curries, casseroles etc.

They go really well in curries - I like them with spinach, onion and chickpea veggie curry. Wedges baked in their skins served with steak or pan fried fish - also lovely. The recipe you mention sounds lovely too.

I live in the southern US (Florida) and they are eaten with anything and everything. I love them baked and topped with sour cream. For holidays, they are baked and mashed with butter, brown sugar and cinnamon and baked again with a crunchy pecan topping. They can be baked into a pie that tastes very much like pumpkin pie. I definitely eat more sweet potatoes than white potatoes or rice.

Senegalese peanut stew. It's a real autumn/winter favourite in our house, easy to make and freezes well. We usually have a big bowl of it with buttered crusty bread.

There's quite a few recipes online, or I can type out my version if you want - mine was given to me by my friend so I don't know which online version it resembles most closely.

Roast them instead of spuds with a roast, roasted in salad, in curry, really anything you could do with pumpkin or potatoes you can replace with sweet potato.

Everything, pretty much, that potatoes go with.

I like to do sweet potato and potato mash, it's lovely roasted, it makes great fries and wedges, and you can use it as a substitute for pumpkin in pumpkin pie.

@BoreOfWhabylon, sure, no problem. It's a pretty flexible recipe so you can add more garlic, ginger, chilli etc as you go along. Or more peanut butter if you're a pig like me!

(it all cooks in one pot, but it needs to be a big pot!)

INGREDIENTS
Oil for frying
2 onions, chopped
1 bell pepper, any colour, chopped
0.5lb of sweet potato, chopped into 0.5 inch chunks
2 carrots, sliced
Garlic, 1 clove, chopped
Ginger, chopped (I use the frozen ready chopped stuff so I can add more to taste)
1 large chilli (or equivalent in seeds), chopped.
2 pints of vegetable stock
6 tablespoons of peanut butter (smooth is a bit better I think, but it doesn't matter)
Handful of fresh or frozen spinach

METHOD
Fry the onions and the pepper in the oil for 3 minutes.
Stir in the sweet potato, carrots and garlic, cook for 1 minute.
Add the ginger, the chilli and the vegetable stock, stir well. Bring it to the boil. Add the peanut butter, stir until it's melted in - it'll look quite smooth then.
Cover the pot, turn the heat down and simmer for 30 minutes, stirring occasionally.
Finally add the spinach, stir in and cook for about 10 minutes.

My favourite way is roasted wedges with soy sauce, ginger, lime and garlic or just mashed with whatever you would usually have mashed potato with or roasted with a roast dinner.

Which of the sweet potatoes do you all use for these recipes.?

We get two types. The orange one and then the white one which has a purplely skin. The latter make the best chips but I prefer the orange one generally.

I don't like ordinary potatoes (I know, I know...) but I do like sweet potatoes, so I use them in any recipe that calls for ordinary pots. I will sometimes 'dilute' them with an ordinary potato if sweet potato looks as though it may be a bit much - for example to top a shepherds' pie, sp on its own is a bit too sweet.

Love that recipe above @CarrieMoonbeams. Unfortunately I can't eat chilli, but might give it a go without the chillis in!

I use them in curries with chickpeas and spinach, etc. Or bake them, or they are also nice roasted as wedges.

My favourite meal is a baked sweet potato, served with butte, finely chopped red chilli and coriander leaves (a Nigel Slater recipe); I have it with gammon steak and sweetcorn/peas. Yum!
