Too many veggies! Messed up my grocery order help needed

Gah! I’ve cocked up my grocery order and I now have that needs used up in the next week:

12 salad tomatoes
2 packs cherry tomatoes
2 large packs mozzarella
6 sweet peppers
2.5 cucumbers

And it’s only me here!

I don’t have a blender or slow cooker at the moment and very little space in freezer!

So...hit me with some ideas please?

All I can think of is:

Chunky soup - due to no blender, have to admit I’m not a big fan of this kind of soup but maybe you can persuade me with a great recipe?

Ratatouille

Having tomato and mozzarella on toast every day for lunch!

Minds gone blank!

Tried googling but it’s mainly pasta sauce and similar which I don’t really fancy

Can you cook cucumber?? No idea what to do with that!

I would roast some of the tomatoes and peppers, and do something with the result - pasta sauce (I know!), cold salad with the mozzarella, with chicken. I'd also eat it hot on toast, but that's probably me!
Rogan Josh curries are heavily tomato based?
Make your own pizza?
Once cooked, tomato- pepper stuff could be frozen?

DH would say yes to cooking cucumber, but he also cooks lettuce and other things I dont think should be cooked! You might have to take a loss on some of that cucumber - although it will probably last longer than a week in the fridge. Cucumber water?
DS did a nice salad of deseeded cucumber, deseeded tomato and tinned sweetcorn. Served with paprika chicken and flatbread.

Gazpacho?

Make roasted pepper and tomato sauce for pasta (and use as pizza sauce along with the mozzarella)?

Tomato, mozzarella and basil salad

Roasted tomato and pepper soup (can be frozen again)

I'd take the softer tomatoes and make into a simple sauce and freeze (if you have room!)
I'd also freeze one of the mozzarella-it freezes very well.

Do you like fajitas and enchiladas? Peppers and tomatoes (latter).

Pepper and tomatoes also go well in chilli.

I'm vegetarian

I'm not good with spicy food - upsets my stomach which is unfortunate as I like it taste wise, I can manage mild spicy food at a push but only on days my stomach is settled

Will maybe make a mild chilli, probably a batch of ratatouille and a batch of pasta sauce to use when I feel like eating that. (I've rather over done the pasta lately and sickened myself of it!)

It's the cucumber! But I do like the idea of cucumber water. I drink strawberry flavoured water mainly anyway and strawberry and cucumber go together.

Slice 4 of the peppers, put on a tray and freeze, move to a bag when frozen so they don't stick together. You can then chuck them into stirfrys or roast from frozen when you want them.

I don’t think it’s that big of a deal. Just eat what you normally would, but in smaller portions as you can supplement it with a side salad of the extra veg and top it with the cheese

Checked and one of the mozzarellas dated next week which is a relief, had some of the mozzarella for lunch on the side of cucumber sandwiches.

From googling apparently you can stir fry cucumber so that's something I can do.

I've had a couple of the large tomatoes as salted wedges on the side of last nights dinner and today's lunch (I'm gonna be so sick of tomatoes Grin)

Thinking also to slice cucumbers into thin batons and freeze to use as ice cubes in drinks (do we think it'll work in a rum and coke? Grin probably not but definitely in the water)

Gazpacho will use up tomatoes peppers and cucumber.
Tzadziki with grated cucumber and yoghurt.
Provencale Salade with tomatoes & peppers
Try slicing cucumber thickly then frying briefly, rather like courgette.
Chilled cucumber soup with yoghurt and vegetable stock, no cooking for this, just grating and stirring.

I did think tzatziki but I've no yoghurt in (housebound i tend to stick to one weekly delivery and usually I am better organised - slight glitches with supermarket app meant I THOUGHT I'd forgotten to order said items and added to the order so I've basically ordered double what I normally do)

I've never had cold soup - I know it's a thing I've just never tried it - but I'm fairly adventurous food wise normally but I generally prefer my soups blended

Do you have good store cupboard stock? You can do a delicious salad of crushed and chopped cucumber with some Shaoxing/ rice wine and soy sauce dressing.

The veg will last longer in the fridge too, if you look after it. Mozzarella should be OK if not in an open bag.

Stir-fried little batons of cucumber with garlic, fresh ginger and soy sauce. Plus Chinese greens or spring greens or chard or spinach if liked.

PS I agree with previous poster's husband - yes, lettuce can be cooked. Traditionally, washed and shredded, it goes with green peas, then the whole lot is gently cooked in butter. Sprinkling of black pepper when peas are done is optional, and - this is also traditional - a teaspoon of sugar can be added with the lettuce at the start of cooking.

You could just slice it all up and have it raw with lunch! Boring I know.

Blended roasted red pepper and ground almonds is a great base for a mild curry paste (plus ginger, onion, garlic, spices - simmer in butter and add coco cream, meat, veg).

Oh also - Ottolenghi has a great recipe for red pepper dip, also with ground almonds and then feta, garlic and onion, here. It works with those three ingredients, don’t think I’ve ever made it with all those he suggests.

My French rels always remove the skin from cucumber (but that’s where the vitamins are 😫) and they serve it in slices thinly lengthways with salt, pepper and vinaigrette. Or tzatziki would be nice.

When you can bear pasta again, you could try this goat’s cheese pasta salad with roast toms.

To be fair fresh stuff is packed so full of preservatives these days that it’ll probably last you ages (Hmm at Ocado nectarines still rock hard after two weeks).

Can you buy a blender for a tenner and make a load of soup? Will keep for 5-6 days in the fridge

Cucumbers should be OK in the fridge for a few days I think. What are the dates like, you can generally go past them? Perhaps get yoghurt next week?

Make up some tomato & onion rice and use to stuff some peppers, top with mozzarella before cooking for a quick lunch.

Stir chopped tomatoes and peppers into cous-cous with olives & spring onions for a light lunch.

Make an open tart with tomatoes, peppers (diced) and mozzarella.

Buy some nice bread and make bruschetta to use up some of the tomatoes (you could add mozzarella too)

Roast tomatoes and peppers with olive oil, salt, pepper and basil. Whizz together with a bit of water to make soup. If there is going to be too much, whizz some of it concentrated and freeze and water it down a bit after defrosting.

Make some mozzarella cheese on toast (with naice bread, if you have it) to serve with it.

Mozarella could also be frozen and doesn't take up much freezer room.

Bin the cucumbers; they are horrible!

Roast gnocchi with the peepers and tomatoes. Melt mozzarella over the top for the last 5 mins in the oven
