Help- courgette recipes please

Because a weeks total neglect means my 2 plants have gone into overdrive. Turns out the seed packet wasnt lying when it said 'reliable, heavy cropper' ffs. 9 of the things are ready to be picked and eaten. There were none on the plants when we went away last week because I picked all the baby ones before I went.

DH thinks he hates the things but doesnt notice if I chop them small enough. The kids will willingly eat them as well in small doses. However, if I attempt to serve up this many courgettes in a week I'll either put myself off them for life or the kids will mutiny.

BBC good food have a courgette lasagne recipe.
I think you can use them in muffins.
I'm sure someone on here said to dry them in the oven and freeze, I don't remember the method.
Grate into tomato sauce.
Bolo but use pepper and courgette instead of carrots/celery.

I also finely grate or chop a courgette into most things - chilli, bolognese, etc.

Roasted veg lasagne, ratatouille, roasted veg with couscous and grilled halloumi?

They are delicious in cakes. I make this - my two who are 3&6 don't notice the courgette is in them at all. This lady has lots of similar recipes.

they keep quite well in the fridge. I grate them into any sauces or soups.

mince, onions and courgette as pasta sauce is nice.

cut them in rounds and roast in the oven with a little curry powder.

do you have a good carrot cake recipe?
courgette works great instead of carrot.

cut some up into small chunk and freeze in portions to add to soup.

grate some and freeze in portions to add to tomato sauce.

that's not an issue if the op used f1 seeds from a seed shop.

it can be an issue with courgettes/cucumber/pumpkin from self collected seeds. but honestly, it tastes sooo disgusting that you would not continue eating unless you are very stubborn.

  • Grate, steam then serve as a side dish with grated parmesan on top
  • Grate into a courgette cake. it keeps the cake moist and you can't taste it. You can then freeze the cake if it lasts that long!
  • I too grate it onto my lasagne or bolognese sauces
  • Grate into a frittatta with any other left over veg

The seeds that were recalled are Mr Fothergills. So they are branded seeds from a seed shop, and people have been very ill.

And thanks for the heads up about the bitter poisonous courgettes. My seeds came from a suttons packet and the ones we have had off the plants so far taste like normal courgettes to me.

Not a recipe but a recent discovery - if you're roasting or sauteing them chop in advance and leave out on a tray as long as possible - dries them enough that they brown much quicker and you avoid that horrible wetness. Also works with spiralised. I think it was a Rachel Roddy tip, per an Italian thing.

Courgette gratin is lovely. We also cube and freeze it to add to bolognaise, chilli, pasta sauce etc all winter.

Sliced fried gently in olive oil with garlic. Ground pepper and lemon juice over the top just before dishing up. I can eat buckets done like that.

Sliced, drizzled with olive oil and garlic, then grilled (do the same with red peppers, carrots, corn).

Or dice a courgette and fry it (in very little oil) put it aside, then fry a large diced onion and some bacon dices, combine all in the pan and add cream (or yoghurt), season with sage, parsley or to your liking, salt and pepper. Makes a great pastasauce.

Made this pasta a couple of weeks ago, and my 4 year old who won't willingly eat any veg and my husband who is not a fan of courgettes wolfed it down.. courgette pasta

Grate and saute in butter, add double cream and parmesan (you can add chilli flakes too if you like it spicy), and mix in cooked pasta. Delicious.
