WHY CAN'T I COOK RICE??

In the past few years I've tried to improve on basics.

Now I can cook omelettes, steak, basic cakes, roast pork with proper crackling.

BUT I CAN'T COOK RICE Sad

I mug rice to 1.5 boiling water.

Previously rinse rice for as long as you can be arsed. It does make a difference.

Rice and water in saucepan. Being to boil ( will happen immediately). Turn to minimum heat, put lid on and cook until holes appear in top of rice. Tip pan to see if any excess water is visible; if it is, continue for a while.

When all water has been absorbed, take off heat and place in sieve and pour a couple of kettles of boiling water over to take off any remaining starch

This method has NEVER EVER failed me.Grin

I'm with you op. Have tried and tried all sorts of methods, bought a rice cooker, didn't work, ditto microwave rice cooker. Done the 1 part rice 2 part water, simmered it,boiled it, left it in the pan witn lid on. I cannot cook riceSad tried risotto last weekShock it was crap. Surprisingly i trained as a chef,retired now and happily use microwave bags of rice(even that comes out lumpy Hmm)

I haven't had boil in the bag rice since I emptied a cooked bag into some bowls and thoughtj it seemed a bit too sticky. Dh picked up a forkful of his curry only to find an enormous great rice moth in it 🤢

I used to think I couldn’t cook rice, but then I found a method (I think Delia?) which always works:

Basmati
Double the volume of boiling water to rice
Rinse under tap in sieve
Put in saucepan with boiling water
Put lid on, simmer for 15 mins
Ta da - perfect fluffy rice, no need to drain.

My lockdown present to my sushi-loving self was a Yum Asia rice cooker. It does all the rices, plus porridge and rice pudding. It has a countdown timer, and it's easy to was up. I love it.

I always refer to Delia Smith's Perfect Rice recipe, it's quite reliable.

Wash the rice so that you loose some of the starch.
Cover the rice in water and bring to the boil then turn off the heat.
The rice will cook and can be drained without burning or sticking.

My Philippine nanny has taught me. Wash and leave for 30 mins. Then drain. Put right amount of water and rice in and cover. Take off heat and let the remaining water steam it to cooked perfection. In the U.K. we miss out this IEP step of soaking the rice before cooking.

Basmati rice

1 cup rice 1 cup boiling water

put both in a saucepan

Bring to boil put lid on and turn heat right down

timer on for 10 minutes [it won't boil dry]

take lid off. Perfect dry and fluffy rice

There a bit of a nak to cooking rice it’s not hard once you know how. Always stick with Basmati rice, make sure you give it a good wash and don’t add too much water. You have to lower the heat whilst cooking after about 10mins. Add butter to reduce burning the rice.

Boil in the bag is a no go. Get a rice cooker if you must!

Double water. Use hot water. Try soaking your rice for at least ten minutes before hand for a nicer finish . When i soak an hour i do 1.5 water ratio and once water starts boiling i put lid on and let it cook in oven :) i use basmati

I rinse the rice three times, then leave it sitting in a sieve whilst I get on with anything else that needs doing. Then stick in the pan/rice cooker, add cold water so it comes up to my knuckles when my hand is flat on the rice, put on to boil, put lid on, forget about it until I can smell it.

Perfect every time.

1 part rice, 1.5 part water.

Rice in pan, add the boiling water
Bring back to boil
Once it hits boil, lid on and lowest heat
When you cant see any water left, take lid off, fluff rice with a fork. Turn heat off and put lid back on. Let it steam for another 5 min.

I used to be so rubbish at rice but this works every time for fluffy dry plump rice.

I only use basmati. I use a a cup of rice and 1.5 cups of boiled water. Get up to boiling, turn down to 4. Put a dish cloth over the top and put the lid on. Cook for for 17min.
This has never failed me. Increase as needed.

Me neither, got a horrible soggy mess

I can cook rice in several styles. But I have an answer to the soggy mess rice. Press the excess water out through muslin and then tell everyone it's Bangladeshi rice Smile - Bangladeshi rice is supposed to be rolled into a ball and only adheres if it's soggy! And it sounds so much more cosmopolitan than "I can't cook rice"
