I have lots of double cream - what can i make?

I have a huge tub of double cream which was substituted for the much smaller pot I'd ordered. It went out of date today but it's still fine but now open so needs using up

Anyone got any good recipes that require the use of lots of cream, ideally something that keeps or can be frozen. I thought of fudge, but the recipes i've seen with cream seem to require glucose syrup, not sure how essential that is?

Butter!

Then portion it out and make garlic butter, herb butter, and freeze.

It’s really fun making butter.

Chop an onion. Add a bag of frozen peas to a sauce pan. Add the cream, cook until peas cooked and cream has boiled away some...
Omg delicious..

dauphinoise potatoes to go with dinner tonight
a cream based soup
fresh fruit and cream
add some to mashed potatoes
quiche
mac and cheese with cream in it

Whip the cream lightly and freeze in portions you can then use it in cooking ad you need it.

Home-made ice cream. Whip it, carefully stir in jam, add crushed amaretti biscuits if you have any, freeze. That’s it.

Wow, lots of ideas already. I'll start googling some of these. Ideally it needs to be something that doesn't involve me consuming 600ml of cream in the next 24 hours :-)

Chocolate ganache especially as the cream has to be heated to just before boiling point then can even be frozen if not required.

Scones - I use whipped instead of clotted cream

You can also pipe whipped cream into rosettes or whatever and freeze to use later on cakes etc

By the way double cream is often absolutely fine for up to a week after the sell by date in my experience. I think the very high fat content gives it a much longer shelf life than milk.

I find unopened it's fine past it's sell by date for a week or more, but once it's been unsealed it needs using.

Ice cream?

Can you freeze double cream if you whip it first?

Actually I think I would make and freeze dauphinoise potatoes, being a piggy I would freeze them in single portions so I could have them sneakily when I am eating on my own.

Ice cream is too much faff in my experience without an icecream maker.

I think i'm going to go with lemon posset and then freeze what's left in ice cube trays and try it in iced coffee

No, ice cream is easy. I make Brown bread ice cream in a tub and I think you only have to whisk it once then throw it in a tub and freeze. Lots of online recipes for simple ice cream made with sugar, cream and favouring.

Also Delia Smith's Butterscotch sauce has cream in it, lasts for 6 weeks in the fridge and is heavenly (with your homemade ice cream Grin)

There's a three ingredient scone recipie online that uses flour, lemonade and cream. I've never tried it, been meaning to, but that could be good

It's the freezing part that's a faff in my experience, if you want to get anything with a decent texture you need to freeze and churn. The recipe to make ice cream itself is a doddle. If i had an ice cream maker I'd just make frozen custard

I made salted almond ice-cream (no ice cream machine) and it wasn't too much faff - my second choice was going to be butter
