@cricketmum84 I was expecting you to say wales, scotland or Northern Ireland!

Sounds lovely and cosmopolitan. My ndn are Polish, downstairs across the close Irish, rest are Scots as am I but my accent is "weird" (a mix of Scots welsh and English due to moving around as an army brat) so goodness knows where they think I'm from!

The Poles originally thought I was South African!

Still haven’t caught up but have had a wonderful weekend so days of cooking.

Yesterday used up some out of date Brie, tired apple, remainder of a jar of cranberry sauce and the herbs that my son massacred from one of my plants to make a delicious brie, apple and onion tart. Recipe here, it’s so good I heartily recommend it. www.bbcgoodfood.com/recipes/brie-apple-onion-tart

Then made some scones to get into the VE Day party vibe, used a Mary Berry recipe they turned out delicious but I rolled them too thin. We had them with last of the double cream, whipped and curd and jam from the fridge.

Then had a very ailing pineapple and was feeling ambitious so made battered sweet and sour chicken and noodles which was gobbled down by all.

I’ve not got a veggie experiment in the overnight cauli “fish” and chips! I know we have some veggie cauli fans on the thread, so will let you know how it goes.

Mmm I love halloumi. My veggie DH doesn’t which is such a shame!

Here is veggie “fish” and chips in all their glory and it was thoroughly yum. Definitely recommend and child friendly. Made with cauli, leek and courgette. I didn’t have courgette so used feta instead which worked fine.

Oooh, sweet and sour, haven't had that in a long time. I have prawns in the freezer, so maybe tomorrow.
Today has mainly been a sort of all day brunch of VE day leftovers, so probably a sandwich or salad tonight!

I made a full cooked breakfast this morning, as I’ve read that the nation is resorting to breakfast in its time if need. My family didn’t seem fussed. I think bacon rolls suit them just as well.

Made spaghetti with courgettes just for me tonight. Realised I was fed up of eating what everyone else eats - in our normal life there are lots of evenings where dinner gets broken up and we all get a chance to suit ourselves. So I just broke it up, despite no sports clubs / business dinners / visits or what not. I ate last, I’m only just done and it’s 10pm!

DH and I made afternoon tea for some friends today.

We plated it and delivered it to our friends and then zoomed them for a virtual tea party.

My friend said it’s the first meal she has shared with anyone in 8 weeks.

It honestly never occurred to me.

Spaghetti with courgettes sounds delicious. I’ve three to use up, would be interested for any favourite recipes. I think it’s important to make sure you’re not just cooking for others but also for yourself. Particularly during this time.

Omg that afternoon tea! Amazing.

My freezer is full to bursting so today it’s an easy lunch of pie, mash and peas to create sone space.

Due to a miscommunication, I now have six red and yellow peppers. Any suggestions? Has to be veggie and I’m not a fan of stuffed peppers.

@PurpleDaisies I would say a pepper jalfrezi, lots of thinly sliced peppers in a curry sauce made from tinned tomatoes, fresh tomatoes, garam masala, curry powder, chillies, garlic and ginger. Yum! I quite fancy that myself now!

Afternoon tea looks great, I love the mini trifles!
I made a roasted red pepper and tomato quiche for the tea party of doom, it was very tasty.
Romesco sause, or muhammera is also tasty and uses red peppers ( I'm sure yellow would be fine too, just a different colour)

Thanks for the suggestions. I’d forgotten about jalfrezi! I’m planning on making some flatbreads with sourdough discard so I’ll definitely try the Muhammara. I’ve never made that before but I really like that sort of dip. I ate bucketloads of avjar on holiday last summer and it sounds similar.

We did it for 7 people and there was a selection of the following depending on tastes and needs.....

Prawn cocktail sandwiches
Ham and tomato
Cheese and homemade chutney

Cheese and tomato straws

‘Sausage’ rolls of cannellini beans, lentil and thyme with mustard

Tomato and feta skewer

Homemade scones with jam and cream

Chocolate Macarons

Banana cake

Trifle

Everyone was so surprised and happy and I think I could do deliveries for afternoon tea!
We delivered it on stands with a flower in a vase 😀😀😀

He's so huge @Weedsnseeds1! Ivycat is a tiny wee slip of a thing. 3.2kg and fully grown! He looks massive!
