Breakfast - is this enough and can I improve?

This morning for breakfast my 14 year old DS (skinny and growing) and I (not remotely skinny and dieting) had this:

1 slice of brown bread and butter (I didnt have this)
1 softly boiled egg
2 sliver/slices of smoked salmon (obviously we wouldn't usually have this but I picked it up as a treat)

He isn't doing a huge amount (almost none) or exercise. Im doing a couple of online workouts a day.

He'll be 'hungry' again in an hour. Am I being mean with food? I'm trying to give him decent food rather than sugary carby cereals.

That is pretty small.
Can you provide another portion? My two DC are three years old and they both have two slices of bread or toast and some fruit each morning during the week. Cereal is another option. Sometimes I like to give them half a pork sausage to eat or even make some fried or scrambled egg on toast for them for a bit of additional protein too. Try a healthy semi cooked breakfast with fruit, and less meat once a month.
He might also enjoy having pancakes or some hearty veg soup etc for lunch. He needs a varied and mostly healthy diet more than anything. You could also prepare for him things like beans on toast for lunch with a fruit salad or yoghurt. What about involving him in the cooking? That might help.
Ask him what he wants to eat for breakfast, lunch or dinner each day. Make up a short list of possible menu options with him. Periodically review the list and see if you can add to it. Ensure that he has a portion of meat, fish and vegetables most of the time. Offer healthy snacks like nuts, cheese to him. Strawberries are nice in the summertime. Bananas are also good. Perhaps show him a online healthy eating advice leaflet. You can even get him making his own healthy breakfast once a week to start with. I like to give my two a handful of sliced up bananas or blueberries at breakfast.

My children eat two slices of toast, and an egg. Then snack an hour or so later on fruit.

I don't think he needs to be give. Leaflets on healthy eating. It's not his problem... you could be creating issues where there are none.

As long as there aren't money issues (there are in my house so I need to be a bit of a battle axe about helping themselves!) just fill the fridge and cupboard up with stuff and let him set his own diet. If he's skinny at 14 I doubt he'll suddenly balloon.
