I agree with you on the mental health support. It's more vital than ever. I think there will be so much "collateral damage" other than the por people who are dying and their bereaved families.

I make a yoghurt cake where you use the pot to measure everything. It’s dead easy and tastes great.

I’ve got jus rol croissants in the oven. Officially out of date by a week but I’m sure they’re fine.

What's everyone's plans for Easter Sunday dinner? We would usually do a big meal and have family round but it's just the three of us... thinking me and DD May bake if we can get hold of some more flour. Can't be bothered making a big dinner though when it's just us.

Oh and trad leg of lamb for Easter lunch. Have a whole leg so hoping to do a lamb curry one day and a lamb flatbreads with spicy chickpeas for the next two dinners with leftovers

I'd like the yoghurt cake recipe too. I made one a long time ago, which wasn't very good, I found it rather bland, so would like to try again.

I've got a joint of Beef for dinner tomorrow - only 3 of us but I have a 'serves 5' joint, so hopefully will be enough leftovers for a sandwich of two Monday!
Tonight is a japanese recipe - Okonomiaki, which is a sort of flour-egg-cabbage omelette type thing served with either hoisin or oyster sauce and mayo. It is a lot tastier than it sounds! And it will use up the white cabbage I bought for coleslaw and only used half of.

Easter Sunday. Hmm...

Think will be veggie sausages, root veg mash and some sort of cabbage side. I got a big green leafy thing in the veg box. With gravy and possibly stuffing. Random fruit crumble for pudding.

Yoghurt cake:
Buy small pot of yoghurt. Greek, natural, whatever as long as it’s full fat. Alternatively use a 1/2 cup measuring cup.
Empty into a mixing bowl.
Use pot to measure one pot of sunflower oil, two pots of (caster) sugar and three pots of self raising flour. Add three eggs, splash of vanilla extract. Mix and bake in a lined loaf tin at gas mark 4/180oC for about an hour.

You can add extra stuff, like desiccated coconut (nice on top-it goes toasty), lemon zest etc.

I like it split in half after baking, then filled with jam and buttercream.

Me too.
Only two of us so will be using leftovers for a while.
Just roasting it, with garlic, rosemary and anchovy paste (haven't got a tin of anchovies) stuffed in little slashed pockets all over it.
Potatoes dauphinoise, cabbage (not sure yet how I'm doing that - braised with a little bacon, maybe) and glazed carrots. Plus Yorkshire puddings, at DH's request.

Tomorrow will be four minute beef joint (instant pot special, if you know, you know), roast potatoes, carrots and parsnips, green beans and peas. And homemade Yorkshire puddings.

And then homemade plum (from our tree!) crumble and double cream for pudding. 🤤

@ptumbi How did your Okonomiayaki turn out? I’ve been wanting to try that for a while. Did you use a recipe?

We’re going to have a roast chicken with the usual trimmings plus cauli cheese out the freezer for veggie DH tomorrow. Rhubarb pie and Custard for pudding!

We had a pesto, goats cheese and griddled veg salad for lunch today with the remains of last nights salads. Might be more pizza this evening as we’ve dough to finish off.

We also had fresh strawberries, very much enjoying the fresh fruit and veg that DH bought back yesterday!

Greek salad for lunch in the garden - I didn't have any olives so I upped the flavour by adding some marjoram leaves from my herb bed. Was really nice so I think I might remember that for the future.

As tomorrow is going to be hot I might roast the chicken DH bought tonight and have it cold with salads - we have a ridiculous amount of carrots at the moment so I will try @Furble carrot salad upthread as one of them.

DH also got some cod so we can have that for dinner tonight - anyone any bright ideas on combining cod and cabbage?

I think I’ll do the same and roast the chicken tonight, we can have it cold with potato salad, carrot salad, and something green and griddled (thinking courgette, asparagus and peas with some feta), it also takes all the pressure off for cooking tomorrow!

I’m heading into the kitchen now. I’ve got an attempt at gingerbread men that DH did with the boys whilst I was working on Thursday that didn’t bind to try and salvage and two ailing Bramleys that desperately need to be upcycled into a cake! Should keep me out of trouble for a few hours! Grin

Ooh @LaMarschallin hadn't thought of yorkshires but definitely a good idea. Can't remember if I have a tin of anchovies languishing in the stores or not.

@Weedsnseeds1 ploughman's is my favourite meal every. When I was a little girl I would always order one if we were eating out. Used to make the family laugh as the other kids were ordering sausages and chicken nuggets 😂

@magnarocks Tomorrow will be four minute beef joint (instant pot special, if you know, you know I haven't tried that, as the result looks too pink for me; but I love zero minute chicken. I don't eat the skin, so I don't bother browning it in the oven.
