I made the crispy Greek pie today thank you @PurpleDaisies! Was yummy and I'll probably do another couple with the remaining filo pastry sheets Smile

I'll probably do another bread pudding this week as DTS1 hates his crusts so I cut them off and save them up... haven't thought of anything else to use them for yet and bread pudding is pretty easy and keeps well.

Realised that I have some parsnips to use up and I really don't like parsnips Hmm I clearly want to like them as I keep buying them but will probably end up doing some sort of mash with them to disguise the taste...

@RubySlippers77 I only like parsnips when my dad makes them. I've realised his trick is liberally dousing them in honey AND brown sugar and then roasting them
Mums were never as good because she was trying to find a sugar alternative. Note, Splenda doesn't work for roasted parsnips EnvyEnvy

Good morning fellow frugal foodies. What’s on the menu and what needs using up today?
I’ve defrosted some homemade sweet shortcrust from the freezer last night so hoping to come up with a nice sweet creation with that today.
I’ve also got quite a few eggs to get through, more sprouting spuds and an ailing sweet potato. I fancy a Spanish style tortilla with chorizo as that will be lovely for lunches during the week.

Question for you all? Do you routinely or have you ever cook your way through an entire (or the majority) of a cookbook? I tend to buy them and peruse endlessly but then mostly just cook from bbcgoodfood. I’d love to start trying more adventurous things though.

Today is Mr Magnarocks' birthday, he's requested a CBA (chicken, bacon and avocado) bagel for lunch - his fave from a local cafe - they're pretty tasty, with a few salad leaves and honey mustard dressing and then ribeye steak, chips and tender stem broccoli for dinner.

Oh and a chocolate and salted caramel birthday cake is also in progress. 3 yo is a very keen, albeit somewhat disobedient baker. 😆

Furble, I haven’t done a whole book, but sometimes I have done week long challenges to cook from the same book - this works really well if the book is for a specific cuisine. For example, I remember that Mexican week from Death By Burrito was a triumph, because all the leftovers work well together and things roll over into other things easily. Recently, the same has been true of Abra Berns’ Ruffage - a vegetable book with a strong authorial voice from midwestern USA.

I have to use a mystery cut of meat today. Its a packet of smoked beef rib - no actual bones are evident, I haven’t opened it yet, but I think there is more than one piece in there squashed together. DH thinks stew, I’m not sure about smokey stew. I thought maybe lay on a tray of chopped veggies and stick in hot oven.

I think the beef rib is meant to be eaten American BBQ style, so oven probably best.
I'm doing some more croissants this morning, then having a go at some bagels.

You could make a custard tart with the pastry and eggs.

I have asparagus popping up in the garden, and a packet of puff pastry in the fridge, so it’s asparagus tart for lunch today.
I’ve concocted lunches this last week from various bowls of leftovers which turn either into a soup or a stir fry creation. I’m certainly going to adopt a similar approach in the future, but there again, it’ll only be the two of us and I won’t be feeding the 5 thousand.

Supper is a BBQ which DS seems to have taken over. Which is fine by me!

I might try making the lemonade scones, though it would mean using all of my self raising flour. And I'll have the rest in a Pimms, thanks to whoever suggested that!

Lunch will be sardines on toast.

Dinner - hm, I have peppers, onions, aubergine, and half a jar of curry sauce. I'm defrosting some chickpea flatbreads to go with.

I absolutely love reading these threads, it's a real positive in my life right now! Thanks to you all who share your recipes, ideas and questions. And pics!

I have bits for a bbq today, so all fine there.

Main things to use up (from a box delivery, so it's always a little random!) are:
10 bacon rashers
8 eggs
4 mini cos lettuce
1 and a half cucumbers (but no yoghurt left to make dip!)

We also have in various cupboard bits, freezer stuff, and:
4 tomatoes
Celery x 1.5 bunches
Massive courgette
2 red peppers
Halloumi

Thinking an easy Monday night dinner of bacon, eggs -maybe with potato waffles and a tin of beans.

Greek salad to go with the barbie today in an effort to use up lettuce and courgette.

Might raid through the fridge jars - I could take them all outside and sit on the patio, I have such an urge not to waste any sunshine!!

3 ingredient lemonade scone with jersey black butter and cream.

Mmmm, memories of Jersey last year!

recipe: Equal amounts cream and lemonade (say 1 cup) and 3 times the amount self raising flour (eg 3 cups).

Mix all together - it's quite sticky.
Roll out and cut out scone shapes.
Brush with a little milk
Bake at 200 for 20 mins.

Mine aren't very sweet (cos it's diet lemonade, i guess), but still nice and fluffy.

Cauliflower steak for me today! I've got some harissa powder and some ras-el-hanout so will pick one and mix with olive oil and brush over before I fry. Just not sure what to serve with it?? I've got quite a lot of veg in at the moment plus some salad. Thinking maybe roasted tomatoes and peppers?
