Hey everyone!

1st thread is here

Hope that link worked! I’ve never done it that way before...

@Londonmummy66 are you sure you shouldn’t save the aubergine and have it roasted? It’s too much of a treat to waste it on blitzing up! Even if you have to eat it all yourself and not share with the children...😉

Graphista those tomatoes look amazing!

I've got a fair amount of leftover sausage meat from yesterday - the butchers sausages are huge! I took the ends of the 6 of them and still had large portions for tea Grin I'm going to use the 'ends' in a kale/lime/peanut concoction as I managed to get kale in Waitrose yesterday.

Funny thing tho - I walk past Waitrose every day on my way to work, (It's my Corner Shop! Grin) and there have been queues round the block - like about 100 people. Since Monday pm the queues have totally vanished! I went past yesterday and went straight in! Was eerie, Grin like the old times... and the checkouts were empty too.

Still no flour tho.

I’ve got a sad cauliflower that I can’t decide what to do with. I’d normally do curry but I’ve got leftover daal for lunch. Or bosh cauliflower wings but no breadcrumbs. Any ideas? Needs to be veggie. Have most normal store cupboard stuff.

You could make pakora or bhaji with half of it to go with your lunch?

Then a soup tomorrow with the other half?

Aubergine = purple death veg 😂 I'd be chucking it in the bin 😂

Ninkanink · 22/04/2020 11:46

Haha okay then, as you were! 👍 it’s one of my favourite veg so I confess I hadn’t considered the possibility that you might not want it all to yourself! 😂

@Ninkanink I force myself to try it occasionally in case I've changed my mind but nope 😂 although to be fair I used to absolutely hate swede and leeks and now they are two of my favourites so there's hope yet!

cricketmum84 · 22/04/2020 12:00

@PurpleDaisies apparently the cauli wings are just as nice tossed in egg and then corn flour and spices and oven baked. Maybe give that a go? I have yet another cauliflower from this weeks veg box so I'm going to give them a go for lunch tomorrow.

Furble · 22/04/2020 12:00

I had some double cream and creme fraiche to use up yesterday as well as cherry tomatoes so I made this cheese and onion tart with a defrosted roll of puff pastry. It was absolutely gobbled down by everyone and was very easy to put together.

I omitted the bacon from this recipe. www.bbcgoodfood.com/recipes/smoky-cheese-onion-tart

Mixed a tin of sardines in tomato sauce with a big blob of humous, to make a tasty toast topping, garnished with slices of home pickled courgette.

Ninkanink · 22/04/2020 13:05

Dorset Apple cake is done! I had to use a tin that was a bit too big so it’s got less depth than it should, but it’s very yummy. I want to eat another big piece, but I really shouldn’t...

Purple - maybe grate it to make cauli rice? have with chili or whatever.

Nink - I have a fab recipe for Dorset Apple cake; I go mad on it in Autumn when the trees give me a glut! I could just go a slice right now Grin

Weedsnseeds1 · 22/04/2020 14:17

Today's experiment is mildly alcoholic fizzy drinks using wild yeast. I have a ginger beer, a strawberry, cantaloupe and mint and a Mexican concoction called Tepache made from pineapple skin underway.
The ginger beer is fermenting already, the raisin yeast I made is a complete thug!

Ninkanink · 22/04/2020 14:23

Cauliflower rice would be a lot less faff!

@ptumbi I accidentally ordered twice as many cooking apples as I meant to, so we’ll have a few treats over the next week or two.

Continuing on the 🍏 🍏 🍏 theme, lunch was an apple and walnut salad with Saint Agur. So fresh and delicious!

One Granny Smith apple, one celery stalk and leaves, and chicory, all mixed together and dressed in a vinaigrette, warm roasted chopped walnuts and cheese sprinkled on top.

That salad looks delicious @Ninkanink

SegregateMumBev · 22/04/2020 18:13

Rice paper wrappers, you know the things you make summer rolls out of - ideas?

Weedsnseeds1 · 22/04/2020 18:25

The only use I know for rice wrappers is Vietnamese style spring rolls I'm afraid Segregate!
Maybe you could sub them for rice paper when making macaroons ( the coconut ones), but I have to say I have never tried it!

ClientQ · 22/04/2020 18:38

Using up my salad from yesterday and left over halloumi
They fell apart a bit but halloumi, sweetcorn and chilli fritters

I’d look at Korean recipes for inspiration for the rice paper.

Two tone chicken! 😄

Legs are peri peri for tonight’s dinner, breasts are plain salt and pepper to be used at a later date!

I’m currently enjoying my favourite cook’s spoils - crispy chicken wings!! 😋😋

Forgot to photograph but had five spice crispy duck legs with courgetti salad for dinner. Recipe for salad is here www.olivemagazine.com/recipes/vegan/courgetti-som-tam/ - highly recommended!

I have a pack of fresh filo that I have realised should have been cooked today. Do we think it will be ok to cook tomorrow. Does anyone have a good savoury filo recipe??

PurpleDaisies · 22/04/2020 19:30

Thanks for all the cauliflower suggestions. I had a closer look in the fridge and found rice, plus sad cabbage, beans and radishes. Did a stir fry with general tso sauce which is one of my favourite things. Dh had egg fried rice. I was saintly and had miso soup on the side.

This tasted so much nicer than it looks.

@PurpleDaisies It looks delicious!

@cricketmum84 it was so good. I’ve got another head of chicory so I’m doing another variation tomorrow.

@Pegase crispy duck is so yummy. We’re having some on Friday. The filo pastry will be fine. Delia’s mini tarts are super yummy and surprisingly filling, would do nicely as a springtime evening meal with bubbly 😋:

You can also make bigger ones with the same or similar toppings.

I think I’ve already linked to the crispy Greek style pie on bbc good food. It’s my favourite thing to do with filo and very forgiving of changes if you fancy a different filling.

Ninkanink · 22/04/2020 19:41

@ClientQ your dinner looks great too! I love fritters.
