Leeks...what can I make with them?

Just had a veg box delivered and there are 2 massive leeks. Never cooked them before.

Not great soup fans so dont realky want leek and potato soup!

I did think of perhaps a leek and cheese quiche
Any ideas?

I sometimes use leeks in carbonara or stew/casserole.

Slice and cook with sliced courgette very slowly in a deep frying pan with butter seasoning and a splash of vermouth or dry white wine.

Suet and SR flour. Add chopped leek and water until a thick dough. Spread on a baking tray and cook until golden. You can't get better ime....

Shame you don't like soup, there goes the obvious suggestion. I use them instead of onions quite a bit as they don't disagree with me quite so violently! So chopped up in pasta, in chilli or curry sauce. Caramelized and mixed in with mashed potato or on top of a cottage pie.

They’re lovely cut into coins and roasted with other veg.

I also slice them up and fry with bacon then cook in the oven with chicken breasts and add cheese towards the end.

Leeks cooked in loads of butter with black pepper is lovely, we usually have it as a side to things like sausages and potatoes

A leek is a just a milder tasting version of an onion, so can be used in any recipe that uses an onion. Make sure you split the green end (or cut completely in half) so you can wash all the grit/dirt out which often gets trapped between the leaves.

  • steam and serve with grated cheese on top or make into a gratin
  • fry with bacon and serve as a side to a roast or other main
  • Add cooked leek to mash
  • chicken and leek pie
  • leek and stilton tart/flan
  • mushroom/leek/spinach risotto

Otherwise, there are multiple recipes online, esp the BBC website.

Whatever you would normally make with onions.

Just wash the leeks, chop off the top and bottom (the top of the stalks where they break open, and the bottom where it’s stringy).

Chop into coins. Sauté with oil.

Then use like you’d use sautéed onions.

Cheesy leeks, a great side dish using cream and cheese. Not the healthiest!!

Slice and rinse them, then fry with bacon, butter, garlic. Brown some chicken thighs. Deglaze the pan with some white wine. Bake in the oven with some creme fraiche poured over, if you've got any!

as pp.
you can use them anywhere instead of onion.
or as veg, we like it cooked with a little white wine (or stock) and cream.
or in a stir fry.

clean well, there can be sand between the layers where it turns from white to green.

Would be lovely in a quiche instead of onions.
Also, I think they are best in a risotto.Leek, pea and mushroom risotto with cheese.
If you're not used to prepping them - Take off the papery tough outside leaves, then top and tail. Chop finely and then wash them as they can get traces of dirt quite deep inside. Pat the chopped leeks dry and cook them, if poss, in butter not oil as they really compliment each other's flavour.

Cheesy leeks are my absolute fave. Fry leeks. Bung in cream If you’ve got some and cheese (Stilton is good). Eat with everything

Hugh fw had a nice leek risotto recipe although we use cashews instead of chestnuts
