Leeks...what can I make with them?

Just had a veg box delivered and there are 2 massive leeks. Never cooked them before.

Not great soup fans so dont realky want leek and potato soup!

I did think of perhaps a leek and cheese quiche
Any ideas?

CLAPPING EGGS, a version of Wyau Ynys Môn. Chopped leeks, softened in butter and mixed with mashed potatoes. Spoon around the edge of an oven dish, put hard boiled eggs, halved or not, your choice, and pour over cheese sauce. Bake in the oven until golden and bubbling. Serve with bread and butter.

Be careful to really rinse them well, they get sand and soil between the layers.

Then just cook slowly on the hob with a big knob of butter and a little black pepper till softened.

If you have cabbage as well, put them together in a pan with olive oil and cracked black pepper. Fry them off, yum. My mil loves it when I make it for her.
Leek in a casserole/stew is great, especially with sausages.

Thinly slice some potatoes and either matchstick or also thinly slice the leek. Alternate layers in a wide shallow casserole dish, putting a few blobs of butter in as you go. Make the top layer a potato one. A bit more butter in little blobs on the top. Pour in vegetable stock about 2/3 of the way up the dish and bake slowly. You can microwave first to get the potatoes partially cooked if you want to.

Cheesy leeks sound amazing! I use them in risotto or just sauteed with loads of butter as a side veg. There's also a hairy Bikers recipe that uses leeks instead of lasagne sheets in lasagne and its surprisingly good.

I made a chicken and leek pot pie the other night with some slightly past their best leeks. It was lovely.

I also mix sliced leeks with sliced courgettes, green beans, etc and microwave with a bit of butter and garlic.

Leeks washed and finely chopped, gently sauteed with chopped garlic in butter, black pepper, herbs until soft. Stir in veggie stock cube and a can of coconut milk for a delicious creamy non-milk sauce and serve with pasta

I soften them in a pan then add a dollop of soft cheese and some mustard and have them with sausages.

I do cheesy leeks sometimes as well.

We’ve got 2 as well but they give me awful tummy issues. Thank you all for the ideas though- I’m going to try a couple for the rest of the family to try.

Yes, slitting the top part and rinsing upside down under a running tap is definitely key to washing the grit out.

You do not want gritty leeks.

I chop them and put them in the oven on top of sausages with fennel seeds. Serve with sweet potato mash.

Cheesy leek and potato bake.

Sliced potatoes that are just cooked, place in oven proof dish. Layer of chopped sauteed leeks. Then cover with cheese sauce and bake until the top is golden about 20 mins. We serve with extra veg (often cauliflower and carrots) and sausages but can be a nice meal by itself.

Chicken and leek risotto..one of our staples.
So tasty with onions, sweet corn and little tiny frozen peas.

There’s a portion in the freezer, might bags that for tomorrow nights tea.

Goodness some fantastic ideas here..

We have sausages today so will put some on top and in the mash.

Like the chicken and leek pie and Im going to do a soup....make it thick.

I fry them up with shredded sprouts and peas, you can add bacon or chorizo to this too. Or just simply fry in lots of butter with garlic delicious.
