Too many cannellini beans

Very boring question, but I've just cooked, from dry, a LOT of cannellini beans. I was making a lemony Middle Eastern side dish, and totally miscalculated how much those mothers swell up. So now I have a morass of fairly unappetising, unflavoured beans. What else can I do with them?

They are nice added to casseroles, cold with an olive oil and herby dressing.

Cannellini beans have very little flavour. There are plenty of other varieties with a lot more taste.

You don’t use cannellini beans for their flavour - you cook them in dishes where they take on flavour, or you dress them in herby vinaigrettes. You can make your own baked beans with them too, I’d imagine.

Fasolada soup is very nice, recipes available online but basically, fry an onion, add the beans lots of dry mixed herbs, fresh thyme if you have it, fresh parsley, couple of chopped carrots, tin of tomatoes and lots of olive oil, add a bit of water to create soup consistency (although this dish can be stew like...) simmer for a bit to soften carrots and beans then 15 mins before end add chopped celery (optional) and more fresh parsley.

Add to any soup, especially minestrone style, or casserole especially sausage, to bulk it out.
Blend with plenty of garlic for a dip.
Add herbs and serve as a side dish with pork or sausages.
Add to a rich tomato sauce, serve with crusty bread.

Finely grate a few onions and quite a few gloves of garlic and a large courgette and shred some kale or greens very very thinly
Fry the onions, garlic and courgette and kale in olive oil with smoked paprika, rosemary, lots of lemons zest and a little cumin salt and pepper.
Add about 500g of cooked beans to the pan and mash everything together and then add some lemon juice, lots of black pepper, salt. Add about 2 heaped tablespoons of very fine polenta or very dry breadcrumbs and mix well. Set aside in a shallow dish in the fridge for a couple of hours. Take out of fridge and form burgers and coat in breadcrumbs, or a little flour or some very fine polenta. Fry on each side till brown then cook in the oven for about 10 minutes.

Make a pork & tomato stew with white beans, onions, garlic and sage, and freeze it.

Great with rice one evening when you don’t feel like cooking.

I love making a bean salad with these and butter beans. Add diced red onion, lettuce, tomatoes, courgette (if you have some), olives, then dress with a French dressing (mustard, olive oil, vinegar and garlic). I also add some fresh chilli for a touch of spice, and any other veg that needs using up.

You could also use them with kidney beans for a vegetarian chilli?

They're great in stews! I make a chicken cacciatore with them in.

These are my favourite beans. I eat them a lot with salad...I marinate them in chilli olive oil and salt and leave in the fridge then just have as and when.

I've made cannellini bean mash before as an alternative to potato. Mash or blend it with some olive oil and seasonings, makes a nice side dish.

Freeze them then use to make white bean mash. Mash them with olive oil, lemon and garlic. Really nice with steak or fish

Fry some chorizo, leaving the oil in the pan
Fry 1-2 onions in the chorizo and oil
Add the cannelli beans and a good squeeze of tomato paste

No idea if this is a take on a Spanish recipe I found once, but it makes a filling side dish, or you can serve it with a salad, and a poached egg on top as a main.
