Cheesecake recipe - must taste amazing

Ever since becoming pregnant with #2 I’ve been craving cheesecake

I’ve bought supermarket ones from Coop, Sainsbury’s and Waitrose and they just haven’t been amazing.

I had a really lovely slice from IKEA but I’m not close enough to IKEA to go every day.

Are they difficult to make?

I think it needs to be a baked cheesecake based on my taste tests

Made a lovely one this afternoon with DD. Strawberry and white chocolate. The filling was 450g mascarpone, 250g melted white chocolate, 2 eggs, 3tbsp caster sugar, 300g chopped strawberries. Base was 200g digestive biscuits and 55g melted butter. Baked 150degreeC for an hour.

I make a wonderful chocolate one but it’s not baked. The Cheesecake shop is the place to buy nice cheesecake.

@SisterAgathaVanHelsing I do! It adds something extra. It's a really lovely smooth cheesecake. My dad and husband fight over it. I do find when chilling it can seep so I make sure it has a container under it

I was going to suggest a Gordon Ramsay recipe but it’s not baked. However I think what makes a really good one for me is a ginger biscuit base rather than digestive.

The nigella chocolate peanut butter one is genuinely heaven, it should be painfully rich but the sour cream makes it perfectly palatable and beautifully balanced. My honest to god favourite ever recipe

ilovesausages that looks excellent. I was astounded at it saying overall time ‘5 hours 5 mins’ so read on thinking there must be some kind of ottelenghi-esque complication. Refrigeration time included !

May make this weekend.

I too love cheesecake but only baked version and with good sour cream (tart!).
Not much of a sweet tooth but once or twice a year my craving for it is stronggggg! (And I can eat surprising amounts)

Mine is a refrigerator cheesecake not baked - this is a copy and paste of the email I have sent to people (on request) after they have eaten it.

It's also halal, by accident but popular with work colleagues who eat halal.

Cheesecake

Ingredients

1 200g tub Philadelphia cheese (or supermarket own brand cream cheese, or mascarpone for a special occasion)

1 small tub (75 ml) double cream

½ packet digestive biscuits

½ pack butter

75g caster sugar (can use any sugar for taste but caster is smoother)

Flavouring – fruit syrup, lemon juice, cocoa powder, or pureed fruit

Utensils

Mixing bowl and whisk or a food processor

Loose bottom baking tin

Plastic bag (freezer bags are good) and rolling pin

Microwavable bowl or small pan

1 desert spoon

Method

Put the biscuits in the bag and bash with the rolling pin until they are crumbs, put these in the tin. Melt the butter and pour over the crumb and then use the spoon to press the base in to the tin.

Put the cream in the bowl and whisk until stiff.

Add the sugar and cream cheese. You could also use artificial sweetener.

Add any flavouring and mix until you get a smooth mixture.

Pour (actually it is more of a dollop) on to the base and put in the fridge overnight

Nigella’s White Chocolate cheesecake goes down well with family and friends here, it is a no bake one though but very easy to make and fairly cheap if you get own brand stuff.

I made a really good Biscoff cheesecake the other day, not baked though.
Literally mix the base ingredients together and press into tin and then mix filling ingredients together and then chill. I didn’t Bother with The topping

Funnily enough I was looking at that one the other day as I have condensed milk and lemon curd that I want to use up and it was my turn to take treats into the office, but I chickened out as I didn't want to try an untested recipe in case it went wrong and I didn't have time to do something else.

Good to hear that the recipe works and is nice - I'm going to do it for DPs birthday in a couple of weeks.

Can't help you with recipes OP, as my preference is definitely the unbaked kind and something citrusy, usual preference is Nigella's lime cheesecake/key lime pie, I think it's the same thing, with either a dark chocolate or ginger biscuit base. I buy it from M&S if I can't be arsed making it.

The cheesecake that I linked to above was soooo good. I’m not even usually a huge cheesecake fan but jt was so tasty!

It seems like it had so much Philly in it but somehow it works!
