I'm hosting a Boxing Day buffet, what are you bringing?

I'm hosting on Boxing Day, I'm trying to write my shopping list! But with everything else going on, my brain has turned to mush.

Help me, what do you serve at these things?

I'd like it to be fairly easy. I'm no Gordon Ramsey but above all, I don't want it to be too time consuming.

One attendee has a fish allergy!

Cold poached salmon, my favourite thing in the entire world. Fish allergy sufferer can sit in the porch (joking!).

Mini muffin pizzas...
English muffins, halved, topped with tomato sauce (home-made or from a jar) and grated cheese, and whacked under the grill. Easily jazzed up with olive slices, chopped ham, whatever takes your fancy.

Seafood pasta salad...
Tiny pasta shells (usually packaged as being for soup), cooked up, then add chopped whatever you fancy. We use smoked salmon (buy cheap off-cuts, and doesn’t need a lot), crab sticks, prawns and tinned clams. Toss together with a nice sharp vinaigrette. Delicious, and even better the next day, so make plenty.

Ooh, this thread is making me hungry! Here's what I am actually planning for a buffet next weekend (may not be the most crowd-pleasing but it is tailored to family tastes):

  • celeriac remoulade.
  • fennel and orange salad
  • baked ham
  • pork belly cooked with star anise and cinnamon
  • crisp green salad with a tarragon vinegar dressing
  • baked potatoes
  • garlic butter
  • challah bread

I am not a crowd as such, SarahAndQuack, but that would please me. A lot of menus, while containing good things, are really stodgy by comparison.

If there’s time and the avocados are nice..I want to have a go at making cheese cake with avocados

I foolishly allowed a VERY health conscious friend to provide dessert for a dinner I was hosting. It was "key lime pie" made with avocado or maybe courgettes with an oat base. Practically inedible. So cross that one off the list OP. If you're having cheesecake, have cheesecake. Or my banoffee Grin

I have just googled Camembert hedgehog and am definitely going to add that to my list. I've actually got folks coming Christmas Eve - as ell as Christmas Day, so 'hedgehog' it is!
