Vege Meal Planners PLEASE HELP

I'm stuck in a very dull loop of meals and need some inspiration. Family of 3, 1 16month DS.

We only eat vegetarian, no quorn though as it gives DS tummy ache annoyingly, we ate it a lot before he came along. Please help with your top ideas/meals/recipes. The easier the better as I'm pregnant with DC 2 and working so time is tight.

If anyone's got a simple roasted veg lasagne recipe they recommend that would be helpful too.

Not the best with ideas but YouTube is FULL of great stuff! Loads of busy mums doing meals on a budget too. Go on YouTube for some inspo!

Just had www.bbcgoodfood.com/recipes/mexican-bean-soup-guacamole which was fab - added some grates cheese.

Hadn't thought about looking on YouTube, will have a look now!

That soup looks good, will stick it on next weeks plan. Someone's said about adding sweet corn which should get DS involved as he loves it.

I just use normal meat recipes and substitute the meat with beans, soy (and quorn although not helpful for you.) I also increase the herbs and spices slightly to give a bit more flavour.
Just had vegetarian enchiladas (used the chicken recipe from the BBC good food and vivera chicken substitute (soy not quorn) instead of real chicken.) There is a veggie chilli on the stove to go in the freezer - lots of pulses and some veggie mince - I can use that in burritos, tacos, just with rice and on jacket potatoes. (Youngest will eat it only on pasta - weird child!)
Fajitas - using spice mix from allrecipes.co.uk - onions, peppers and either beans or some sort of soy/quorn protein.
Veggie sausage pasta bake. Put veggie sausages, veg, dry pasta in a tray, add tomato pasta sauce (onion, garlic, basil and chopped tomatoes) and then top with water until almost full. In the oven for 30 minutes - add grated cheese 10 minutes before the end.
Vegetable Tagine on BBC good food website.
We have a how to be a curry legend cookbook from the Spicery and have lots of curries. (Make the meat ones but with vegetables/tofu/soy/quorn.) Sweet potato Rogan Josh is a big favourite here - you get the spice blends with the book so you don’t need lots of different spices

I hadn't actually thought about quorn and soy products being different, bit stupid of me. I've just avoided all meat subs until yesterday when I tried quorn chicken style pieces in a curry again, he screamed for an hour at bedtime and then had awful nappies this morning Confused

Might give soy sausages a go in that pasta bake recipe. And will look up the curry book.

I like that one from the bbc good food website but I have to admit I’ve been using shop bought tomato sauce if I’m in a hurry. I’ve also mixed it up and added onions and courgettes to get more veggies in.
We also eat veggie fajitas, falafel, veggie curry (could be mild for the child and spicier for the adults)

Some of my quick fixes below. Sorry for the Mexican slant, although you could easily change flavours and ingredients to Italian, Middle Eastern or Indian and it works. I don't have kids but have fed variations of this to DN's who are 4 and 2 just non-spicy versions.

Bean chilli enchilada casserole:
Make or buy bean chilli, layer with tortillas, add enchilada sauce and cheese on top and bake for 30 mins. I like it served with salad.

Bean chilli nacho jacket potatoes:
Basically top jacket potato or sweet potato with chilli, then add whatever you like: cheese, sour cream, guac, jalapenos etc

Sheet pan quesadillas:
Put whatever you like inside. This recipe is beef but I do black bean and corn, Chipotle style tofu sofritas, fake chicken. These work great with Italian flavours- e.g. cheese, veggie pesto and roasted veg too.

Stuffed veg pancakes.

Pancakes stuffed with fried favourite veg in undiluted condensed mushroom soup sauce with cheese on top. Baked in the oven. Rest of the tin of soup spread between the layers of pancakes.

The most filling vegetarian dish I know.

Can't be doing with any of the meat representatives - they're always disappointing.

I am really enjoying the Bosh cookbook at the moment. Very easy to follow and flavorful. Lots of quick midweek meals.

Lasagne - serves 1
1 tbsp olive oil
1 clove garlic
100g aspaargus cut into three slices
100g frozen peas
100g frozen broad beans
100g pesto
Zest of 1 lemon
150g mascarpone
50g vegetarian hard cheese finely grated
6 lasagne sheets
4 tbsp milk
Salt and pepper

Let me know if you like the sound on that then I'll write out the instructions ")

We love veggie sausage casserole. Aldi's casserole mix, onion, sweet potato, carrots, cauliflower, any leftover veg in a big oven dish with Cauldron veggie sausages. Not a fan of quorn, but love Cauldrons Lincolnshire sausage. Served with crusty bread or rice. It's our "leftover meal" at the end of the week because you can chuck any bits of veg you have left in.

Our staples:
Spag Bol (soy instead of quorn)
Thai curry - tofu or just veg
Mushroom risotto
Vegetable paella
Pasta bake/macaroni/cauliflower cheese
Leftover vegetable bake - any random veg with cheese sauce!

I use a fair bit of quorn but my favourite non-quorn veggie meals are:

Chickpea and spinach curry - very easy one pan dish with a tin of chickpeas, a tin of chopped tomatoes, garlic, frozen spinach and some curry powder and tandoori powder. You can mix up which spices you use depending on how spicy you want it.

Jackfruit chilli - again easy one pan meal, tin of jackfruit. Tin of tomatoes, paprika, chilli powder, garlic, red wine vinegar and a veg stock cube.

Heck Bollywood sausages in flatbread with salad and yoghurt and mint

Linda McCartney shredded duck (soy protein based) with little rice pancakes and cucumber and spring onion salad.

This Roast veg lasagne is nice. A little on the sweet side for me but my dc and the (meat eating) nieces and nephews love it.

The Sainsbo's Shroomdog sausages are excellent - they come both frozen and in the chilled aisle and in a range of flavours.

This week we're having:
Sweet and sour veggies with rice, from the new Jamie Oliver book: his recipe uses peaches but we're using pineapple.

Veggie spag bol - I use these instead of mince

Lentil soup

Shroomdogs with roasted vege and Savoy cabbage

I only plan four meals ahead, so we can go out or have a takeaway on a Friday

Lots of people using puy lentils, that's a good idea for me. I did used to use them more regularly so I will buy them again, along with those Heck Bollywood sausages which look nice.
