What do you have with an omelette?

I work in a mental health hospital and we're trying to come up with a healthy eating plan. We've put omelette on there, but disagree about whether there needs to be carbs on the side of the dish. I say no. I've never had an omelette with chips or mash or potatoes! Just a crisp salad.
What do you think?

Omelette with rattatouille! (Previous poster sugegstion). OI have rattatouille leftover from today- that is tomorrow sorted then. :)

We eat loads of omelettes.

Asparagus and bacon is nice as is feta and asparagus or spinach and cheese.

A frittata I'd go for chorizo, potato, onion, courgette and red pepper.

I'd never put carbs with a normal omelette.

I had to devise a menu for a hospital ward once and the nurses insisted they needed carbs at every meal but none of them were healthy carbs.

I just turned to DH and said “It never occurred to me to put tomato in an omelette!” It was said without context, so he’s all ‘wtf?’ now.

We tend to have spinach (frozen chopped stuff defrosted in the microwave) and cheese or chorizo, potato and cheese. DH also cheapo prawns and spring onion omelette when he’s watching his cholesterol. We usually have crusty bread or wedges and veg with an omelette if its for dinner, baked beans if for breakfast.

I think chips with an omlette is fairly common, but if you're trying to provide healthy meals it might not be the best option! I think salad is okay as long as there's lots of fillings in the omlette.

What about the crustless quiches, use eggs, cottage cheese, then whatever veg or meats you want, lots of herbs, s & p, top with grated cheese & sliced tomatoes, then bake in the oven until golden brown. Can either make a big one or small individual ones in muffin tins.

we're not providing meals, we're meal planning for those who are going to be discharged and have to feed themselves healthy food whilst on benefits. Lots have been homeless or addicts previously so don't have much experience of cooking

Very challenging budget on UC.

I think ratatouile would be perfect for this; the tinned stuff is brilliant, cheap and keeps pretty much for ever.
I might still want a bit of toast on the side though.
