What do you have with an omelette?

I work in a mental health hospital and we're trying to come up with a healthy eating plan. We've put omelette on there, but disagree about whether there needs to be carbs on the side of the dish. I say no. I've never had an omelette with chips or mash or potatoes! Just a crisp salad.
What do you think?

I'd forgotten about toast! Buttered toast with eggs is a wonder of the world.

prosecco, sadly, even with potatoes in the omelette I often like toast or chips too! Grin

If you're working towards weight loss then serve it with a side salad and a portion of veg such as green beans. It feels less of a 'deprivation' if there's enough food on the plate even if one isn't a carb. Just removing the carb feels sad when dieting but filling up the plate with gorgeous brightly coloured veg and salad helps!

Oh bloody hell all I want in the world now is a cheese ham and mushroom omlette with chips covered in salt and vinegar. Completely disgustingly unhealthy to add the chips but oh man so good. A local soft play centre used to do it and it reminds me of mat leave when I couldn't give a crap about what I ate. Damn you all!

I usually do diced potatoes - chop them into cubes and roast in the oven for 40 mins. I add rosemary and garlic if I'm feeling fancy.

A frittata often has potato in it.

I wouldn't want chips or mash as a side with my omelette.

I like any of the following in omelette: cheese, mushrooms, spring onions, peppers, spinach

A crisp salad on the side might be welcome but I normally have it for breakfast so don't need. Some of my family would eat with a slice of toast on the side.

I agree that a salad with omelette is going to need to be bulked out with good, cheering, filling ingredients like beans, grated cheese, feta, cottage cheese, tuna, green beans, olives, avocado, mushroom stuffed capsicum.

On another point I find a three egg omelette fills me up but a two egg does not. I learnt this whilst doing the body coach weight loss / fitness programme a few years ago.

Nothing. When I'm having an omelette, it is a meal on its own as far as I'm concerned.

I'd just have a salad and maybe some French bread or a crusty roll. Or if not bread then potato or pasta salad.

Comfort food - plain omelette or chopped up warm freshly boiled eggs with Naked Singapore Noodles and a selection of cooked veg.

Healthier version - plain omelette or chopped up warm freshly boiled eggs with curry sauce and larger portion of cooked and raw veg for a bit of crunch. e.g. petits pois, green beans, thinly sliced raw courgette, shredded cabbage, grated carrot, tomatoes, red pepper etc.

For breakfast - nothing, or maybe some tomatoes if I’m trying to get one of 5 a day in (maybe toast but omelette is my go to low carb option so usually nothing)

For lunch - salad.

For dinner - chips (maybe a token salad too)

One of my favourite things to eat in Spain is their tortilla ‘bocadillos’ - ie Spanish omelette on crusty baguette. All the carbs for me!

I love omelette with baked beans. I tend to put tomato, spinach and cheese in the omlette. Sometimes tomato and bacon. Now I really want an omlette!
