Very simple delicious lemon dessert please?

We are in Spain and our garden is full of lemons. I’d make lemon delicious pudding (self saucing) but you have to whip egg whites, and I don’t feel like doing that with a fork. Assume limited ingredients available, and it’s over 30 degrees. Any suggestions? I’m a decent cook and a little fussy, but a thread not so long ago about super easy show piece desserts and lots of them sounded amazing so I’ve high hopes (& I’ve pinned them!)

I mean on holiday in Spain, in a fairly rustically equipped house so standard minimal holiday home equipment.

Lemon posset for at least three meals a day. Also good to add in lime if you want to mix things up a bit.

Just juice them, save some juice for home grilled fish or lamb, and keep the rest (with a bit of sugar) for drizzling over ice cream.

Anything else in 30+ degrees would be beyond me!

I forgot lemon posset, I’m not English. Will give it a go. Lemon juice over ice cream sounds nice! Yes to fresh grilled food but if I take a photo of the bbq you will see that rustic means rustic.
And it is idyllic, just an unequipped idyll!

Now I want this life everyone assumed I have! The reality is I’ve worked late every night for the last two weeks, with a toxic guy in charge of my team who told me everything I did was crap while I kept the clients happy, my pil were staying last week and the week before in our teeny flat and then last night I sprinted out the door of work at 5:30 Friday leaving them in a good shape to take a weeks break!

Ssh don't ruin it. I'm imagining Captain Corelli levels of romance (even though that's Italy not Spain...) and long lazy breakfasts in the sun dappled courtyard, the lemon scented breeze blowing through your salty hair.

Lemon sorbet or lemon meringue pie are my faves.

enidbutton well dh did bring a Louis de bernieres book, so basically you’re spot on Grin. He bought it because he thought I’d like it too.
It’s 20 to 11 and the 4 yo has just gone to sleep, and the one year old is still up taking everyone’s books off them and pretending to read them. Any minute now he will probably Jekyll and Hyde and tear out a few pages. Idyllic. Pfffft.

Syllabub sounds amazing! I don’t have a whisk 😔. I could give it a go though. when they first made it they probably didn’t have a whisk either, but I do think those cooks probably had serious muscles.
As I’m in a rustic idyll naturally I shall make it by milking the cow directly into the wine. Nothing else would be acceptable.

These, oh my word these! I make them and eat them within the space of about an hour. I up the lemon juice/zest as I like mine really tangy. No whipping necessary!
