What are your quick cook (veggie or fish) meals?

Two nights a week we all get in late and need a quick, easy meal to cook. When we've been organised we've cooked extra the day before or whatever.

But when we haven't I need something really quick and easy I can pull put of the cupboard or freezer.

It usually ends up being pizza with crudites or pasta & shop sauce (sometime quick cook tortelini.

Looking for some inspiration! What are your quick cook meals?

(We eat a fair bit of stuff cooked from scratch on other days, don't mind if It's processed as long as it's not totally unhealthy & quick!)

Smoked salmon and pea pasta. Is yum and takes as long as the pasta takes to cook.

Salmon steak with green beans & cous cous

pasta with broccoli and pine nuts. Take as long as it takes the pasta to cook.

Cook some penne
Toast a load of pine nuts
Grate a load of veggie parmesan
cook the broccoli
mix it all together with a dollop or two of creme fraiche.

Smoked salmon and pea pasta

Do you have a recipe for this please or is it just 'cook pasta, chuck in smoked salmon & peas'? Smile

Salmon pieces with a little dried tarragon,butter and lemon juice on top. Put on foiled baking tray 15 mins in oven 180°c. 1 or 2 packets of frozen rice and vegetables (M&S is good); stir fry or steam whilst salmon is cooking.
Serve with mayonnaise etc .
Tasty and really easy.

I recommend the 15 minute Vegan cookbook for this! I make the satay noodles, butternut squash and sage macaroni, courgette and lemon pasta or sweet and sour with cashews when I need a really quick and easy tea. Also beans on toast or soup and bread are great favourites here.

Smoked salmon tagliatelle.

Dice an onion, chuck it in a frying pan, add a veg stock cube and some water, simmer.

Put on pan of water to boil for the pasta.

Add garlic to the onion, I also add anchovy sauce.

Put tagliatelle into cook.

Slice up the salmon into strips, add to onion. Add soured cream and take of the heat.

Drain the pasta, stir through the sauce.

Takes about 10/15 mins.

Homemade pesto - blitz garlic, Parmesan, basil and toasted pine nuts. You can freeze it in pots, and defrost as required. I'd toss in some chopped roasted veg (peppers and courgette work well) too, if you have time.

Pad Thai - stir fry onion, tofu or quorn pieces, eggs, garlic chives if you have them to hand, add tamarind sauce and a bit of sugar, finally add bean sprouts and noodles. Very fast and tasty.

King Prawn Stirfry

2 packs of stir fry veggies
2 packs of tilda quinoi, pumpkin and sunflower seed brown rice
2 packs of King prawns

Chuck veggies in and cook for 3 mins, rice in further 2 mins, prawns and soy sauce (I also use chilli sauce) cook for another 1 minute and its done.

Frittata - eggs, any veggies you have lying around, potatoes too (but those need to be cooked first) cook in a pan, cheese on top if you eat that (and mixed through the egg first) and pop under grill for a few minutes - yum!

DD loves smoked salmon but will only eat it on its own usually. I wonder if I could persuade her to eat it with pasta.... definitely worth a try!

Salmon fillet, cut a slit into it and add a lump of mozzarella and pesto. Bake in the oven for about 15-20 minutes. I usually serve with asparagus sauteed in butter with parmesan, and new potatoes.

Some kind of tomato based saucy fish, birds eye do some nice ones, one of those microwave packs of rice and pre-packaged Mediterranean veg that you whack in the oven for half hour. I have it often and it's luvverly

I love the sound of this. Really simple, but it couldn't fail to be delicious, will definitely do it another evening, thanks :)

However, ideally I want something really quick! If I've got to bake it for 20 minutes and also heat the oven first, then the kids won't be eating till at least 30 minutes after we get home, probably more like 40 with faffing time. I'd like them to be eating asap on those evenings if possible, as there's so little time before bedtime.

Just looking at the preview on Amazon, I can see it starts with tips for how to cook faster. None of them are a revelation, but I can see she's really thinking about speed, excellent! And the reviews of the book / the recipes are brilliant.

Boil pasta (fusilli type)
Open two/three tins tuna and stir mayo in.

Open tin of sweet corn.
Mix and serve with sliced cucumber or cooked broccoli or tomatoes.

Simple and fast and tasty!

There's always marmite pasta. Cook pasta as usual, while it's cooking mix a large spoon of marmite with two spoons of butter. Then when you have drained the pasta, add the marmite butter to the pasta, mix round to coat, then serve. Perfection.

This isn’t very kido friendly but:

Shaved fennel and courgette salad (takes about 2 min to do the veg, squeeze over half a lemon and a drizzle of oil, salt)

Chuck some baby been potatoes

Pressed post by accident.

Chuck some baby new potatoes that come in butter and herbs ready to microwave run the microwave.

Heat some oil in a pan. Dust basa fillets with flour, salt and pepper and fry for 2 mins on each side.

Serve.

You could also put some butter and lemon and capers in the pan is you liked as well.

Oh wow - these recipes are all amazing, I want to cook them all!

I was about to cook a really healthy meal from scratch but made the mistake of turning our induction hob and oven on at the same time which has blown a fuse. My DH is currently at the top of a mountain on a cycling jaunt, trying to explain how to fix it...I've opted for an artery clogging Indian takeaway instead 😬

Chickpea curry.

Sauté onions (frozen ones for speed)
Add 2tbsp curry paste, tomato purée and a tin of tomatoes
Add drained chickpeas cook for ten mins. Options to stir in spinach, paneer, fresh tomatoes etc
Serve with flatbreads and salad
