Best tomato sauce for pasta ever

It's basically 1 tin of tomatoes cooked on a medium heat with half an onion and 5 tablespoons of butter for 45 minutes or so. A bit of stirring now and then.

It's so so good. Really rich and delicious. We didn't have anything else with it, just parmesan and pasta. Yum.

Olive oil doesn’t work, it’s the milk proteins and fat in the butter that make it so perfect. You can of course use olive oil, but it won’t be rich and smooth and would need extras adding to it to get a similar flavour.

This recipe transforms even the dreariest of big standard tinned toms into something sensational. But you will of course get slightly better results with a superior tin.

Going to try this. I do a similar one, but with chopped onions that are part of the sauce, so I'm intrigued by the idea of simmering a halved onion and removing it at the end.

I see the recipe calls for 1 x 28 oz tin of tomatoes which I worked out is around 784 grams. So basically around 2.5 tbsp of butter per standard sized tin of tomatoes - that's not bad at all actually.

Thanks for posting this, DS (3) is really fussy and hates 'bits' in sauces (so, onion mainly!) but he might go for this!

Have this on the hob as I type! Only had salted butter though, so didn't add salt just in case. Only had cheap lidl tinned tomatoes so will see how it goes. Great it can be frozen. Thanks OP, thinking of also purchasing the book!

I've gone with salted butter, it's underway but having Googled the recipe some say 5tbl spoons per 400g of toms and some 5tbl spoons per 800g. I've gone with the 5/400, will it be too rich?

If you can try and get tinned tomatoes without citric acid in. Hard to find but much better quality.

Well it tastes ok, could be the cheap tomatoes. I'll freeze it as not having it tonight anyway. Will look for tomatoes without citric acid!
