Best Vegan recipes please?

I have a friend coming to stay for a few days next weekend and she's vegan.

We're not, but I want to cook some lovely meals that we'll all eat, so can I ask for your best vegan recipes please? I'm really keen not to make a massive deal out of it and make her uncomfortable by slinging her rubbish bland food because I don't know what I'm doing!

What sort of meals do you normally cook? What would you cook if an omnivore came to visit? It might be easier to adapt some of your tried and tested recipes, rather than trying out brand new recipes.

There is a vegan board on MN www.mumsnet.com/Talk/vegan but relax, many meals are accidentally vegan and nobody notices it.

A lovely chickpeas, sliced ripe tomatoes, onions, fresh parsley makes a lunch, a warm tomato soup with sourdough bread brushed with garlic makes a dinner, avocado on toast makes a breakfast, kale chips make a snack,
The next day, do the simplest ever authentic pasta sauce with extra virign olive oil in a pan, crush garlic and cook without burning, add a bottle of italian passata, cover leaving 1 cm gap, after 30 min, add crushed parsley , cook two more minutes, cook italian pasta, and add two basil leaves for decoration. done.

Vegan cooking doesn't have to be bland, focus on what you eat - lovely fresh vegetables - and not on what you leave out - animal products - . Don't go for the fakes route, fake sausage, fake burgers and so on, as it is really highly processed.

Use the VEG in VEGan and you can do no wrong.

Brilliant, thank you, I didn't realise there was a vegan board.

We do eat meat, but I suppose we do also eat quite a lot of 'accidentally' vegan meals like the pasta above. Or at least meals that could be easily adapted by using vegan cheese etc.

A lot of vegan cheese is not very nice, personally I would try as avoid using it unless you know a brand that your visitor likes. You can add a cheesy flavour with nutritional yeast flakes which tastes a bit better than most vegan cheeses.

Vegetable curry is easy to make tasty with plenty of spices. Include lentils or chickpeas for protein. Serve with rice. Be aware that most naan bread seems to have egg but you can serve Pethwara instead.

You can make a reasonable white sauce using Oatly cream and cornflour so you could make a lasagne using either Mediterranean vegetables or squash/spinach/red peppers. Again be aware that a lot of pasta (even dry stuff) has egg but there are plenty of brands that don't. That meal doesn't have much protein so I'd serve a pudding higher in protein to make up for that (soya ice cream or yoghurt)

I am reading this thread for inspiration as DH has recently become vegan and I am interested in new ideas of what to cook (DC and I are not vegan but I generally can't be bothered to cook seperate meals)
Thanks eminybob for pointing out that ready-made puff pastry is often vegan. I googled some new puff pastry based recipes for next week.

Most vegan cheese will be highly processed and transformed. I usually prepare my own. It will never be same as real cheese, the melting properties, the taste given by bacteria and so on, but I have had some success.

Here is how I do my vegan parmesan;

1 generous cup of cashew
3 heaped nutritional yeast table spoon
1 teaspoon garlic powder
1/4 teaspoon of salt

zip zap blend , delicious in its own or on soups, pastas and well pretty much everything

However, if friend is coming just for a few days, just take it as an opportunity to revise and amplify your cooking. Try veggies you have never eaten before such as okras. I bloody love okras and they are prebiotics.
Wash and cut a bit of the head, throw in a pan with a cm of water, a bit of extra virgin olive oil, two cloves of garlic and a generous dash of soy sauce, put on medium heat until most liquid has evaporated.
A fennel and oranges salad. Slice fennel as thin as you can, salt, pepper, olive oil, 1 squeezed orange, 1 sliced orange, parsley, and wine vinegar .
Prepare a sauté of celery-carrot-onion cub super tiny, let them braise in oil for 5 min without burning, add the drained lentils, cook for 5 minutes and serve with black rice.

Ask her which type and brand of vegetable milk she likes (oats, soy, almond...), have some dark chocolate. It doesn't have to say vegan on the packet. Most 70, 80 or 85% dark chocolate have no milk in it, just read the ingredients.

Strawberries and dark chocolate fondue is a fantastic dessert which is vegan .

Really experiment and have fun! Pomegranate is fantastic in salads and desserts, brussel sprouts leaves make fantastic chips, beetroot (cover your cutting board with baking paper to avoid it turning red) with cucumber and cannelloni beans is so yummy.

Avoid buying fakes because you would miss on the opportunity to enjoy uncovering the lid on whole food cooking. It is really quick , tasty and rich

@happypotamus I eat plant-based, kids and DH are not, but we eat 80% the same . I will always have a couple of raw veggies such as grated carrot and a butter lettuce with fresh parsley, and some cooked veggies, green beans, braised carrots, grilled zucchinis, and then add some lentils or tofu for me and cook a steak, chicken stripes, fish or eggs for the family.
I will bake a focaccia and serve it with a platter of baby roma tomatoes , olives , add some mozzarella for them and an avocado for me.

Some great ideas, thank you. Some of these recipes sound fantastic! I really will try some of these and some of the ones I've seen on the vegan forum as well. I'm genuinely interested in making a bit more of an effort to eat a bit 'cleaner'.

I make a few vegan dishes as I have a multi-allergy child, and slow-cooker sweet potato dhal is one of our favourites that the whole family love Smile

Mushroom risotto using dried porcini mushrooms as well as fresh 'shrooms and red wine for extra flavour. I add spinach and peas and parsley at the end and celery as well as onion to begin with, it's a family favourite and we are not even vegetarian.

BenWill It’s pretty much just big chunks of lightly boiled sweet potato, curry paste (I used a tikka masala spice paste), onion, a tin of tomatoes, can of coconut milk or coconut cream, a little veg stock and lentils. I just bung it all in the slow cooker and leave it either on low for 6 hours or high for 3 hours Smile Serve with plain rice and vegan naan breads

Just a note that I think that most wine isn't vegan so you'll need to check the bottle of any you use.

Well I had a wee practice tonight and made caprese stuffed peppers tonight, using vegan mozerella. It was really lovely and something we will def eat anyway! Had it with salad and olive bread.
