I am an excellent baker. But I can’t make scones or brownies. I have given up on scones-ds can make them now. This is my last attempt at brownies. My Aga is heating. I have the Good Food recipe. All I need is your support.

Icing? On brownies? What fresh hell is this?

I like my brownies to be on that magical point between chewy and fudgy. I'm not a fan of brownies which are almost liquid in the centre - if I wanted to drink chocolate then I'd have a pot of sauce!

OK results are in. They are just how I like them - kind of cakey and squidgy at the same time but not completely gooey. I do like my brownies to be quite 'done' though.

One fell apart as I was lifting it, so clearly I had to eat it straightaway as it wasn't perfect Grin I've taken a close up though so you can see the texture. And a comparison shot of a centre one vs a corner edge one.

Has anyone made any nice low sugar brownies with dates, bananas etc to sweeten? Still with chocolate obvs, but probs baking/low sugar. Looking for a tried and tested recipe!

Yes - followed it to the letter. The only additional things I did were firm taps to help knock any air bubbles out - a couple to the bowl after mixing the eggs and sugar together, and then after mixing in the flour, and then to the tin once I'd put the batter in.

I've made brownies loads of times and these definitely have the best texture.

Well, I still haven’t made brownies. But the baking gods have punished me- this is what happened to the loaf of bread that I have been baking every Friday for about a million years...

I make one-bowl brownies with American unsweetened cooking chocolate -- it's very fudgy because it has an obscene amount of sugar in it but incredibly easy.
(I buy the 'Bakers' brand unsweetened cooking chocolate off Amazon or from a deli in St Johns Wood and use the recipe on the inside of the packet. You can also get it in places like Harrods or Selfridges food halls).
They have a variation on the basic recipe - cream cheese brownies - which involves a packet of philly cheese (full fat, NOT 'light') mixed with an egg, 1/3 cup of sugar and a teaspoon of flour, which you then swirl, a spoonful at a time, through the raw brownie mix in the baking tin to give a marbled effect. It's the best.

Not live but my first attempt at vegan brownies last night - I'm not vegan but need to bake these for an event so gave it a trial run. Pretty pleased! I'll take the brownie glory from this thread Grin
