That are filling and delicious?!

The reason “healthy” is in quotes is because I’m not into chemical-ridden substitutes for ingredients but if you have a generally healthy diet what meals do you eat, please?

Family friendly and something your kids wouldn’t touch! 😂

salmon darned cooked in a foil parcel with fresh ginger, sliced spring onion, slivers of red pepper, fresh coriander, fresh chilli (or flakes) and a dash of soy. Baked in the oven. We serve with brown rice or steamed new potatoes and steamed sugar snaps.

Stir fry.
Fry a chopped onion in sesame oil and then add half a chopped fresh chilli, 3 chopped garlic cloves and 4cm grated ginger. After a few mins add 3tbsp soy sauce and 1tsp of turmeric. Add in the stir fry veggies and cook for 2 mins. Add prawns (or chicken or tofu) and cook through with 2 tbsp of peanut butter mixed in. Serve with noodles or rice and fresh coriander

One-pot

Loads of random vegetables and beans (whatever you've got left over), simmered for about 15 minutes in tomato passata, vegetable stock pot. Add some herbs at the end for a couple of minutes.

We have it with vegan garlic bread but would also work with spuds or rice.

Salmon with Nandos rub rubbed in really well and baked in the oven for 15-20 minutes.

Served with a salad of avocado, spring onions, black beans, coriander and a splash of lime juice.

Jacket potato with cheese, coleslaw and salad or cottage cheese and salad, in summer.
Quiche (bought) with new potatoes and salad or mixed frozen veg.

Mushroom omelette or frittata with salad. Include other veg too, if desired.

Quorn and vegetable stirfry with frozen chopped stirfry veg and a sachet stirfry sauce. Serve with wholemeal noodles or brown rice.

Vegetarian burger (bought) with wholemeal bap, oven chips or potato wedges and salad.

Wholemeal pasta with pesto(bought) and some or all of the following:avocado, olives, cherry/plum tomatoes, tinned butter/borlotti/canellini beans and/or hard boiled eggs.

Wholemeal pasta with tinned chilli beans.

I eat healthy, but it’s mainly basic food slung together, I try to eat food as close to its natural source as possible, so mainly unprocessed.

Chicken with mushrooms, onions, peppers, stir fried, add in some noodles and spices, finish with fresh coriander.

Slow cooker beef with swede, butternut squash, carrots, potatoes and stock. (I normally have this with a warm crusty bread roll).

Chicken drumsticks with a peri peri spice rub, then I roast it on a bed of butternut squash in a casserole dish in the oven.

Chicken, mushrooms, bean sprouts, soy sauce and 7 spice.

I’m aware it seems really bland, but my kids and I really enjoy food like this.

Also, salads, I normally do shredded lettuce, apples, grapes, cucumber, baby peppers, and maybe a salad dressing. I’m not really a fan of regular salads.

@IvanaPee yes I just chuck it all in in the morning at the same time, put it on low and it’s ready for dinner time. The smell is amazing as well.

Chicken drumsticks and thighs in a shallow dish with stock and ratatouille. In the oven until cooked through and browned and serve with rice.

Home made sweet and sour.
Squid/ salmon/ cod with sweet potato wedges and veg
Stir fry chicken and veg with noodles or fried rice with pork
Baked pork and apples
Thai style minced pork - basically minced pork fried with red curry paste and some veg on a bed of noodles ( we call it Thai spag Bol)
Spicy chicken and beans (GoodFood recipe)
Pasta amatriciana basically lean bacon and a bottle of passatta sauce I add a load of chilli to mine

Pulled pork (cooked in an Instant Pot) with baby potatoes cooked in the Actifry so hardly any oil, and a salsa of tomatoes, red onion, green chilli, lime juice, crushed garlic and fresh coriander. I do serve it with sour cream though.

More simple, honey and garlic chicken with potatoes and green beans all on one tray (loads of these ideas on Pinterest and YouTube.)

Feta cheese, red pepper and red onion chopped with mint or nutmeg and seasoning mixed with frozen spinach cooked and drained. Make a pie with sheets of filo pastry brushed with melted butter or olive oil and bake at 190 for about an hour or until cooked through.

Salmon in greaseproof parcels with chick peas, two sliced courgettes, olives and olive oil and fresh herbs. Bake in oven with new potatoes sliced and tossed in olive oil.

Instant pot is amazing, we buy Costco 2.6 kg joint, I have faffed with the recipe lots, ie I make my own BBQ sauce but sometimes I just cheat and put in a decent quality ready made one. I don't think marinating it makes a huge difference so I stopped.

The trick is to cut it up, so lay the joint on a chopping board and cut it across the joint about 6cm wide slices.

It takes 80 minutes to cook BUT you have to allow time for it to get to pressure and release the pressure naturally. So I heat the BBQ sauce on saute until it is bubbling then put the pork in. I tend to make it on a weekend when there is no time pressure.

A supermarket sized joint of 2kg takes 65 minutes.

There are loads of YouTubers with Instant Pots, I love Flo Lum, she has had it a while and knows her stuff.
