That are filling and delicious?!

The reason “healthy” is in quotes is because I’m not into chemical-ridden substitutes for ingredients but if you have a generally healthy diet what meals do you eat, please?

Family friendly and something your kids wouldn’t touch! 😂

Home made meatballs with onion and tomato through them,make a quick arribiata sauce and add tomatoes,spring onions and asparagus.easy and cheap to make sometimes have on own sometimes with fresh pasta my two love it

Butterfly chicken breasts, slashed, with dash of oil, lemon juice, chilli seeds, soy, garlic ginger. Put some jarred peppers and onions on top.
Cook in health grill or suchlike.
Serve with plain rice or baby potatoes tossed with butter (I know) garlic and herbs.
Add a light salad.
One of our favourites.
You can vary using cajun, jerk seasoning etc.

We are having baked salmon fillets with red peppers and lentils. This is a 'go-to' midweek dinner that we have a lot.

Last night we had frittata made with goats' cheese, mushrooms, pepper and asparagus.

We never eat potatoes, pasta or rice during the week.

No, not at all. Treat carbs like booze - a weekend thing.

Me and dh gain weight if we overdo the carbs.

Homemade chicken kievs (garlic for me, cheese and ham for DD) with rice and steamed vegetables. Always best if you cut the kievs while they're still hot so the butter oozes over the rice and veg to make them all juicy and garlicky.

Some of our regulars...

Lentil spag bol, with some greens on the side
Vegetable stir fry with noodles
Gnocchi with goats cheese, mushrooms and peas/brocolli
Veggie fajitas, with avocado and lots of chilli
Risotto - with whatever veg needs eating up (I like beetroot best!)
Portobello mushroom and halloumi in a roll with sweet potato and salad on the side... yummm

Would also really recommend the Green Roasting Tin book - lots of healthy veggie recipes and you basically just chuck all the ingredients in a roasting tin and stick it in the oven! Particularly like the orzo pasta and tomato one... so few ingredients but tastes SO GOOD!

There's also a version of the book with meat recipes, which also has very good reviews!

YouWinAgain that sounds delicious! I love the bags of microwave brown rice and microwave steam veg, so handy when you're shattered but still healthy.

I make this once a week at the moment. I do t even like fenel! The anaseed cooks out. Add more pasta and tonnes of salt and lemon at the end Smile

Cajun bean stew - peppers, celery, onion, tomatoes, white beans, cayenne, little cubes of bacon.

Ramen is pretty healthy I think. I do a cheaty basic version with stock, cold chicken from the roast, lots of onion, ginger and veg, cooked up with Chinese five spice and whatever spices I fancy, then simmered while the eggs hard boil, then peel the eggs and put back in, then noodles.

Cauliflower curry with brown rice

Chick pea burgers in wholemeal rolls with salad and sweet potato wedges
Wedges/brown rice with curry sauce (made with onions, carrots, celery, apples and tomatoes)

Avocado, mango and spinach salad with a tahini dressing and crusty bread.

They are easy. Drain, rinse and mash a tin of Chick peas. Add a shake of onion powder and garlic granules, or a clove of fresh garlic finely chopped, a couple of tablespoons of flour, a drained tin of corn and some salt and pepper. Mix well, form into four burgers and chill for half an hour. Then, either fry for about ten minutes or bake at 180 for 20-25 minutes.

Veggie pittas, we buy this new veggie type shawarma kebab "meat" and have it in a pitta with lots of salad and some light mayo. Under 400 calories and incredibly satisfying

Ton of veg on the side
Sprinkled with cheddar cheese

Macaroni cheese with chicken and broccoli (made with almond milk and gluten free flour, gluten free macaroni too though I'm going to switch this to red lentil pasta)

Veg fried rice (chop any random veg you have lying around into really small cubes, stir fry, add cooked rice and serve) I like it with sweet chili sauce, my son just devours it as is.

Spicy chicken- get chicken thighs cut into chunks , yogurt, tandoori spices. Mix yog and spice together in your cooking dish, add the chicken and Cover it with the marinade. Leave all day if you can, or an hour or so at least. Add chunky veg if you like (cauli is lovely) then bake in the oven until everything is cooked. It's delicious, my dc's favourite meal. They have it with corn, with wraps, or with salad and chips.
