Need some new cooking inspiration and everything DH is suggesting for tonight and the rest of the weekend is all sounding a bit blahh!!

What’s your go-to recipe (as posh or as simple as you like)

My easiest ever recipe (not quite the same thing, I know, but it's always a hit) is roasted veg with either sausages or lamb chops. Take the biggest roasting dish you have: throw in quartered red onions, mixed peppers (as many colours as you can find), thickly sliced courgettes, aubergine if you have any, even new potatoes; drizzle with olive oil; season; add garlic or chilli or thyme or a dash of soy sauce; roast in a very hot oven for 45-50 minutes. If you have any left over, it's good cold too with a salad.

My all time favourite is Delia Smith,s Chicken Basque from her Summer book. Absolutely delicious and tasty cold the next day if any left overs!

Mary Berry's lamb tagine. The spice blend is absolute perfection and you can really taste the layers of spice. I don't have a tagine so put mine in a slow cooker. We also have it with rice as not cous cous fans.

It's a recipe from my home country, Portugal. Monkfish with tomato rice. It manages to be delicate, filling and comforting at the same time. Having said that, part of it might be the memories it evokes, as Mum makes it when she visits.

I do something quite similar to TedsFederationRep but chuck in a can of tomatoes and a sprinkle of cayenne pepper, and serve with chicken and a fair amount of parmesan. Never thought to do it with lamb though, sounds divine!

I was going to suggest Delia's Basque chicken as well Booklover. I take it for lunch at work the next day. There is another one in her Winter Collection, Moroccan Baked Chicken with Chickpeas and rice which is good too.

I have a couple. Anna Jones one pot tomato and lemon pasta. Delicious. And also Gino's pasta pizziolia. Very nice too.

Also love a spiced roast chicken. Easy and nice with roast potatoes and a raita

This slow cooked chicken and allspice pasta dish. Sounds weird but it's SOOOOO good! So deep and savoury tasting.
You can use any tube pasta but do follow the rest of the recipe as exactly as you can. Whenever I deviate I regret it

Oh my gosh, so many amazing recipes to try, I’m really glad I started this thread...

Our mind was made up as DH managed to get duck breast reduced at Sainsbury’s but I’m definitely going to try some of these for the rest of the week.

Sausage meatballs in a basic tomato sauce.

I take pork sausages out of their skins and mix in ground fennel seeds, chilli flakes, oregano and parsley. If I've got a lone rasher of smoked streaky bacon I'll chop it very finely and add that too. Roll into balls and cook as per any meatballs in tomato sauce.

Someone posted this pasta recipe on here and we love it; Chicken, bacon, red onion fried. Mixed with pesto & low fat creme fraiche, small splash of water. We have off with tagliatelle. Delicious.
