Need some new cooking inspiration and everything DH is suggesting for tonight and the rest of the weekend is all sounding a bit blahh!!

What’s your go-to recipe (as posh or as simple as you like)

I’ll second Ted’s recipe and add quartered red onions.

Potato and courgette scones
Courgette fried in breadcrums
Chunky vegetable soups
All sorts of stuffed veg baked in the oven( peppers, courgettes).
Fish with tomato sauce and vegetables
Buckwheat with mushroom sauce(although half or MN seems to hate mushrooms)

Side dishes: all kinds of slaws, cherry toms roasted in honey&olive oil

Recently found myself going back to vegetable recipes as I can stuff my face and not feel too heavy. Also a bit fed up with meat.

Fed up with meatballs, pasta, mince and fried bits of chicken (blame my kids)
