We have dramatically reduced our meat intake from twice a day most days to 2-3 times a week.
DH mentioned he was happy not eating meat at home so I am thinking of cutting meat out of our weekly meals completely. I need some more meal ideas though!
I usually make a veg curry, veg salad, lasagne, enchilada, halloumi, halloumi, halloumi. Not a massive fan of beans so bean chillis are not for us.
Would love some new ideas please!

Risotto? Veggy pasta dishes (there are hundreds of options)? Toad in the hole with veggy sausages? Pizza? Stuffed peppers/ mushrooms? Wraps with seasoned veg (roasted or fried), tofu, guacomole, sour cream? Stir fry?
Try googling 'what do vegetarians eat for dinner?' for recipe inspiration! DH recently became vegan and I had no idea what to cook, so typed 'what do vegans eat for dinner' into google to get some ideas.

Thanks. I have looked on pinterest but it mainly comes up with curry.
I usually do stuffed peppers with chilli inside. could try a veg mix instead.

Very trad, but one of (non veggie) dh's absolute favourites is a macaroni/cauliflower cheese combo. Plenty of very cheesy sauce, al dente cauliflower, extra cheese and breadcrumbs on top, whack under the grill to brown. I always add any of the fresh-enough green leaves, not just the 'flower'.

Currently we eat tacos pretty often.

Korean dishes with a meat substitute like Seiten or quorn beef strips - bulgogi or bibimbap.

Sushi with tamago, avocado, cucumber etc.

Look on the quorn website for their quorn paella - my meat eating son said it was the best tasting veg meal he has eaten - he is very fussy about vegetarian food.

Tofu and pepper fajitas
Paneer and chickpea curry
Veg cheese pie
Tofu Katsu curry
Paneer and courgette/sweet potato fritters
Lentil chilli
Halloumi burgers
Dd is the veggie in our house and doesn’t like eggs and is allergic to Quorn which makes it a bit trickier

It depends on how you feel about meat substitutes but we use Quorn mince/chicken style pieces in many recipes that traditionally call for meat. Cottage pie, fajitas, etc.

Lentils are really tasty and bulk out a curry nicely too

Also we love Linda McCartney pies, which go great with vegetables, mash and gravy Smile

It's great that you are eating less meat. The planet and it's animals thank you for it Grin

Would you try bean burgers? If you have a food processor/ mixer a tin of chick pea, a tin of butter beans, a tin of sweetcorn, chopped onion, garlic, dash of c7min , turmeric and spoonful of mint sauce
Once mixed, shape into burgers, bake about 10 mins then add a bit ofcheese on top and bake a further 5 mins, serve with salad

Or proper soups with good bread ( all with onion )
carrot , lentil and coriander
Mushroom (use milk not stock)
Sweet potato squash and flavour with cimemom

Or the simple egg and chips

Oh yes, I forgot about tofu - the marinated packs are delicious and sooo easy to use.

We also eat a lot of eggs - omelette (with absolutely anything) in is quick and filling.

You need a bit of tofu in your life Grin Look at Chinese, Japanese and Thai recipes for tofu- Kung pao tofu, vegetarian ma po tofu, pad Thai (with soy sauce rather than fish sauce). All delicious. A tasty sauce for tofu is chilli paste, soy sauce, rice wine (can use sherry) and miso, add to fried tofu and fried garlic and spring onions.
I’d also get a middle eastern cookbook eg Palestine on a plate or baladi for lots of good salads for summer.

If you like italian food a lot of it is veggie. My tuscan nonna used to make a cheese and potato pie dish , which can also contain spinach and rice , canneloni, ravioli, gnocchi, lots of dishes containing aubergine. As pp said risotto . Stuffed vegetables. Ah I miss her and her cooking so much

One of my absolute faves (it's actually vegan) is vegetable rice with crispy tofu. Fry a load of veg ina. Wok and add rice, and flavour (soya sauce, sugar, tamarind, vinegar etc)
Separately cut strips of pressed tofu and coat in cornflour. Then shallow fry in sunflower oil.
There is a really delicious marinade you can make for the tofu that involves cooking orange and lemon juice with sweet chilli sauce or you can just chuck sweet chilli sauce on them. It's a bosh recipe

Mushroom and pea risotto - I also make in the slow cooker but you can do it more quickly on the hob

I don't want to use meat subs. Id rather have vegetables than quorn. DH won't eat Tofu either but there are some fab ideas here so thank you.
Never tried paneer so am definitley putting that on next weeks plan.

I’m vegan but don’t let that put you off-these things are all delicious. My favourites that aren’t curry:

bosh buffalo cauliflower wings

Cauliflower in a hoisin based sauce

Potato and pesto tart (I leave out the cheese, you can use a jar of pesto for ease)
