We have dramatically reduced our meat intake from twice a day most days to 2-3 times a week.
DH mentioned he was happy not eating meat at home so I am thinking of cutting meat out of our weekly meals completely. I need some more meal ideas though!
I usually make a veg curry, veg salad, lasagne, enchilada, halloumi, halloumi, halloumi. Not a massive fan of beans so bean chillis are not for us.
Would love some new ideas please!

Totally understand about not wanting meat substitutes but just wanted to say that they have come A LONG way in recent years. (memories of horrendous dehydrated textured TVP/soya - shudder!)

Sometimes there just isn't enough protein in a purely vegetable meal to keep you full. Might we worth keeping an open mind if you find this.

Do you like lentils? Bosh shepherd’s potatoes are excellent comfort food and the lentil sauce makes a great bolognaise substitute. Definitely worth trying

Like lentils yes. Will have a look at that.
The meat subs its more that Id rather have the meat. We aren't saying we are going veggie completely - just not buying meat. If we found we were struggling we would buy some but we are working on the theory at the moment that our bodies are probably more efficient than we assume. Gorillas are huge and live on maily plants!

I don't wish to sound negative but if your DH won't eat beans or tofu and you don't want to use Quorn or other meat substitutes, you're going to find this quite challenging.

I understand OP. I think it helps with the meat subs if you don't think of them as substitutes, but additions to your veggie meal Smile

Roaring - it is me that doesn't like beans I eat them in some things (enchilada etc) but wouldn't eat a meal of them like bean chilli - DH thinks tofu will give him cancer Hmm.
My plan is to eat alot of veg! I know it isn't easy that is why I am looking for ideas!

My husband has to cut down his meat intake as he has chronic kidney disease so we don’t eat meat during the week now. He made this lush Greek meal the other day. Homemade falafels made with sweet potato ( you can’t taste the chickpeas don’t worry) feta beetroot mint and lettuce salad, tsatziki, homemade flatbreads ( Jamie recipe dead easy) roasted peppers, with olives, red pepper hummus etc

The best vegetarian recipes tend to come from writers who are veggie themselves such as Rose Elliot, who does a lot of practical every day family food rather than "event" cooking.

There are a few writers who are simply good food writers who include recipes which happen to be vegetarian or vegan eg Nigel Slater or Diana Henry and some of the Hugh FW books. They don't tend to badge them up as "Jamie cashes in on veggies" type editions.

Another one here who doesn’t like Quorn! Sainsbury’s does a mushroom mince I use in place of actual mince; something I find much nicer especially in lasagne etc and because mushrooms cook down and have a meaty texture, you actually don’t notice the difference.

BBQ tofu done in the oven and then served with stir fry veg and noodles, fajitas with portabello mushrooms and peppers, home made pizza,falafels in pittas with hummus and salad, soups done in the slow cooker, Mexican spicy beans with smashed avocado on the top...

We are a bit trickier again because in addition to not really liking quorn, I don’t really like eggs or creamy sauces Blush I am a fusspot!

Very little prep, very adaptable to use up whatever veg/herbs/spices are in the kitchen and high in protein.

It works equally well with Mediterranean herbs or Middle Eastern spices with some fresh flat parsley or coriander.

I discovered by accident that mushrooms cooked in a mix of lemon juice and Dijon mustard are really tasty.

I'm going to try stuffing a courgette with them.

One of my favourite things is a quiche (thinks back to 18 year old me being so annoyed that virtually the only veggie options anywhere were quiche or veggie lasagne).

Caramelised onion and cheese
Fried up onions and red peppers, some basil leaves, and use feta for the cheese
Tonight I'm trying a mushroom and blue cheese one

I'm liking brown rice and vegetables at the moment. It's really cheap, and you can add whatever extra protein you fancy (fried egg, chopped cashews, tofu, etc)
Another real cheapie is yellow split pea soup/stew. Just proper comfort food.

Mushroom stroganoff is nice.
Now tasty tomatoes are coming into season there are lots of options. One nice thing is get pre rolled puff pastry. Cut into squares. Depress a little square we’ll in the middle (so there is a raised edge). Fill with sliced tomato and drizzle with olive oil. Bake, and about five mins before it’s finished layer with sliced goats cheese. Bake again so cheese goes melty
