Whats for dinner tonight - inspire me

I'm completely devoid of ideas, inspiration and inclination. We had meatballs on Monday, spiced chickpea stew and cous cous last night. We've got quite a bit of food in but utterly uninspired especially as if we have meat I have to cook something different for DD who is pescaterian

Home made fish fingers. 4 year old DS1 has pretty much got the technique down with no help from me (except cutting up the fish) and it's one of the few meals all 4 of us will eat so we have them a lot, probably once a fortnight. Probably with some mixed oven chips (whatever root veg we have), corn on the cob and something green.

We are having

Pulled BBQ pork baps, with coleslaw and salad.

I wouldn't normally slow cook a pork joint mid-week, but we have had a nightmare with the freezer conking out, so have cooked and eaten the majority of the contents of the freezer. A few odd combinations, however, Salmon, Prawn & Pea pasta will be recreated.

BBC good food website is good for inspiration too.

My friend's cooking us vegan roast shredded "chicken" (jackfruit). Think with some salads and warm crusty bread –looking forward to it!

Well ours is a pasta bake - leftover pasta and cheese sauce (mine has bacon bits, fried onion, fried garlic, fried mushrooms, peppers, courgettes, frozen petits pois all added to the sauce) which gets frozen and then reheated as a bake with some grated cheese scattered over the top.

I do a similar thing with a cream and white wine sauce, for salmon pieces or prawns in the sauce, with broccoli or peas thrown in as well.

Another useful for "eating and freezing dish" is smoked haddock and broccoli bake.

Poach smoked haddock (or cod or other smoked white fish) in milk with a sliced onion.
Strain out the onion and put in an ovenproof dish (or divide between 2 if making 1 to eat and 1 to freeze - very little extra effort).
Flake the fish and put in the dish.
Chop some broccoli into small florets and put in the dish.
Make a white sauce, using the milk from poaching. Pour over the fish etc.
Top this with a nice layer of mashed potato.
Put a thin layer of breadcrumbs over the top (for a nice crispiness to the finished dish).
Scatter some grated cheese (I like a strong cheddar, edam is also nice) over the top again.
(At this point, cover and freeze whatever is not for today/tomorrow).
Immediately, or up to 24 hours later (so handy to make ahead and put in the oven on a timer to be ready as you all get in), bake for 30-40 minutes at 180 degrees until the top is crispy and golden.

Fish pie, Delia's "luxury fish pie" with rösti and caper topping. It's really good, but I probably wouldn't go to the trouble if we didn't have a supper guest.
