Whats for dinner tonight - inspire me

I'm completely devoid of ideas, inspiration and inclination. We had meatballs on Monday, spiced chickpea stew and cous cous last night. We've got quite a bit of food in but utterly uninspired especially as if we have meat I have to cook something different for DD who is pescaterian

The fish pie I didn't make for tea last night... it got too late and I couldn't be bothered to cook, so we had chicken Kiev and chips last night!

About 10 days ago we had homemade 'pizza' using wholemeal wraps as the base. Everyone then chose their own toppings to put on, along with some mozzarella. It was a quick and easy recipe.

It was also very tasty, and pretty healthy too, as it came in at around 320 cals per 'pizza' (lots of veg, with a smallish amount of cheese, and some shredded ham and chicken on some).

We had a lovely fish curry last week. (recipe from Gousto) basically fry onions, make into a curry sauce with curry paste, stock and creamed coconut. Put spinach in to wilt. Then put white fish on top to cook.

Tonight we're having similar, except I'm making a sourdough base rather than using a wrap.

I make my own bread anyway, so I've worked out that I can make a base from scratch that will have less calories, but more fibre and should be more filling. Again, I'll let everyone choose their own toppings, with the emphasise on veggies Smile

Made this curried fish pie recipe from Jamie Oliver last night and it was delicious and easy. Used frozen haddock and topped with sweet potato instead of potato (personal preference).

Jacket potatoes are really underrated, when cooked in the oven the proper way thing rather than microwave. So yummy!

Traybaked Salmon fillets with green beans, asparagus, tomatoes, oregano & olives just bung it all in, drizzle with oil & suqeeze lemon on top.
Will have with new pots or cous cous

Shepherd's pie, with baby carrots, asparagus and beans.

The kids said they liked the shepherd's pie last time, so it's their fault if they were only saying it to be polite that they're getting it again!

We're having omelette with mild goats cheese and caramelised onions in it served with sweet potato fries (oven cooked) and salad - it's one of our favourites and very quick to make.

Over the last 2 weeks we've also had:

Twice baked jacket potatoes, filled with leek, bacon, cheese and mushrooms.

Basically, bake in the oven until soft inside then scoop out the flesh, and continue to bake the empty skins so they crisp up. Meanwhile, mix potato flesh with the fried onion, bacon, mushroom mix,(or whatever you like) add some grated cheese (or soft cheese), put back into the skin, sprinkle with more grated cheese and bake/grill for about 15 mins until cheese is golden. Lush.

Garlicky prawns with courgetti.

Fry diced onion until softened, add 1 clove minced garlic, and cook for another minute. Season with salt and pepper, and some chilli flakes(optional), add prawns (about 100g/person) and cook through. Add spiralised courgette (about 250g/person), and cook for a further 2-4 minutes. Remove from heat, add a few tablespoons of hot water,or any sauce you fancy, (sweet chilli works well) to loosen mixture then serve.

Last night we had salmon darnes cooked in foil with slivers of red pepper, spring onion, chilli, fresh ginger and coriander and soy sauce, served with steamed baby potatoes and asparagus - another easy 20min fav in our house

I'm trying sausage de Montbéliard tonight, you heat them up in water rather than frying them. I'll do some cavolo nero and some diced Greek style potatoes with them. Wine Wine

I’ve made filled jacket potatoes ( baked, scooped filling out and mashed with butter, mixed with ham, grated cheese and sweet corn. Refilled potato skins, cheeese on top) and will cook again later. With cauliflower cheese
