For whoever asked about the egg man, I presume it refers to the guy who makes omlettes and other egg dishes to order at a hotel breakfast buffet.

I'm also going with parma ham and olives, alongside poached egg.

I think it might be trout rather than salmon, the colours look wrong for salmon unless it's a filter or odd lighting doing it.
