What can I cook for lunch, 6 adults?

Friends are visiting next weekend and I’m making lunch. I’m quite uninventive when it comes to lunch ideas. It needs to be pretty relaxed and informal, and not too heavy. Thought about making a quiche (bought base) but anyone got any other ideas?! Thanks.

I saw your title and thought quiche..with salads and nice bread. Or baked ham, potatoes and salads. Or a soup.

Ooh yes ham a good shout too. And I can go to the bakery in the morning and pick up some interesting sounding bread!

I’d do a lamb dish, it’s winter so that’s warming

Plus green beans with butter and lemon juice
Baby roasted potatoes
A green salad

Potatoes and lamb can be just in the oven
Green beans at last minute, they’re easy
Green salad can be in fridge

Bread, cheese, hummus, salad, pasta, quiche or pizza, "posh" crisps or crackers, olives, sundried tomatoes.

Or a really good casserole with baby potatoes

James Martin Dow’s a wonderful quiche Lorraine recipe. It’s a tiny bit of a faff as you make your own pastry but it’s REALLY worth it. You could always make it all in the morning and then bung in about half hour before they all arrive. A really nice salad to go with it and honestly it’s heaven!

Sliced mozzerella and tomato with balsamic and olive oil drizzled and french baguette to mop it up with, shredded rotisserie chicken, garlic prawns in chilli oil and sidey bits like coleslaw, olives, cous cous... mmmm

Nigellas baked ham in black treacle is amazing and requires zero effort. Then you can just get your bread and some fancy salad

I and many others I know would be disappointed wjth quiche Blush I wouldn't make a fuss, but I'd be going to a McDonald's on way home Grin need other substantial stuff to choose from too.

I think alongside the ham I would have a nice soup on encase anyone wants a wee bowl on arrival - especially if it’s chilly out. Takes the pressure off having to serve straight away

I don't like eggs so quiche is my idea of hell.

Seafood linguine, salad, bread and wine makes for a quick easy lunch.

Pie! The hairy biker pies are really easy and can be made in advance to stick in oven on day.

I would probably cook either a chilli, curry or a beef bourginon the day before and heat it up then all you have to do is rice/mash and veg on the day
I find it difficult to know how much people will eat and if you do too much, these can be frozen

It's too close to Christmas to have ham as the main dish. They'll think it was leftover.

Yes "second day posh lasagne" (with a bit of red wine thrown in) and salad or simple fish pie with a sweet potato topping/greens

Fresh fruit salad & cream and simple trifle...

How about an Irish stew that you can bung in the oven on low all morning and forget about it, OP?

I made a beef and Guinness one for DP's family and all I had to do was throw on some dumplings 30 mins before serving, which I'd made in the morning also.

I served with some steamed broccoli, peas and beans and fresh crusty bread.

Toad in the hole, new potatoes, seasonal vegetables and/or salad.
Fresh fruit or a nursery pudding like hot lemon surprise pudding with extra cream. Or both.

Or baked Camemberts ( 3?) with garlic bread and new potatoes to spear and dip into it, accompanied by sliced prosciutto, salami, chorizo, cornichons etc. Green salad with a tangy dressing.

Tartiflette! You can easily do a large one in an enamel, stoneware or pyrex dish to serve six. With tangy green salad as above.
Sliced oranges in caramel sauce. Biscotti.
