What can I cook for lunch, 6 adults?

Friends are visiting next weekend and I’m making lunch. I’m quite uninventive when it comes to lunch ideas. It needs to be pretty relaxed and informal, and not too heavy. Thought about making a quiche (bought base) but anyone got any other ideas?! Thanks.

Do you have a slow cooker? If so I would do either gammon in brown sugar or pulled pork in ginger ale. Place ingredients in and walk away while it cooks for at least 8-9 hours. Meat will literally fall apart and shred easily when you are ready to eat.

Serve with crusty bread, coleslaw and a nice side salad.

Easy and yummy!

Some good ideas, here.

I presume you already know whether any are vegetarians, coeliacs etc or have religious reasons for not eating ham? Might be worth checking whether any have made new year resolutions about eg giving up meat in January.

For the pulled pork with ginger ale:

Roughly slice a couple of o ions and put in the base of the slow cooker. Place a prom shoulder joint on top, I prefer to remove the skin. Pour in about half a small bottle of ginger ale (I like using Fentimans or the Crabbies alcoholic one).

Switch on and leave for as long as possible (8- 9 hours at least).

Remove from cooking liquor and shred with forks to serve.
